Welcome to the new Sunday Interview and the theme is The Ultimate Bucket List.
In this interview series I would love to know what your top TWO items are on your bucket list and if you have not written one yet, then perhaps it is time to get your thinking caps on.
The readers will want to be convinced that these activities are worthy of putting on the ultimate bucket list, so please give full details of what it is, where if applicable and definitely the why and how. As you can see not all wishes are physical and do not worry if you feel that your chosen item is everyday for others. This is your wish list and you can put anything you like in it.
Also it is taken for granted that you as an individual would do all you can to help others achieve their dreams, help animals in dire trouble and love and support your family. This particular list is about YOU. The top two wishes that you have reserved just for yourself.

I am delighted to say that my first victim guest is the lovely Carol Taylor who for the last few weeks has been encouraging us to become more adventurous with the foods in our diets. We put our heads together and I provide the food and its health benefits and Carol provides delicious recipes that are easy and quick to prepare. Carol lives in Thailand and you will love her blog as it shares the non-tourist locations that she loves and the fresh food that is abundantly available in the markets.

I mean my bucket or F****** it list now that would cause ructions …lol
For at least two weeks I have been racking my brains….and I came up with some weird and wonderful ideas…Like being Prime minister for a week and would everyone needs tin hats …Oh yes! Indeedy…
To meet Michael O’Hare would be amazing and for him to teach me how to create a masterpiece…Wow! and the pinnacle would be to cook it for Michel Roux and have him to go into raptions over the creativity of my food would be the icing on the cake….
Cakes!!! Oh! for a proper oven……
So I opted for boring, the one everyone wants to do….

How to achieve that???
I am working very hard on recipes and it would not be any old cook book it would be healthy eating with a difference…It would be very much on the theme of mine and Sally’s collaboration. Great easy to understand benefits of a healthy diet, proper recipes, using day to day ingredients, recipes which don’t mean spending hours in the kitchen. Recipes, which you can feed to your family knowing that it is healthy for them.
I am passionate about healthy eating but not passionate about supplements and tablets..but healthy proper food.. Let food be thy medicine.
How to grow your own herbs from seeds, pips and cuttings…I have lots of pots some successful and others not so…The parsnips did not work …after my chat with my friend Mr Google…I knew why…
In a nutshell, a book which encompasses the real, achievable deal. I want to inspire and show how it can be done…

I came late to writing…very late and I believe I would not be doing it at all if …..
1. I hadn’t moved here.
2. I hadn’t started blogging which I wouldn’t have done if I hadn’t moved here.
Rewind 20 years ago…I wish I had written this then it would be so totally different . Life certainly takes you down many paths and you meet so many people who help shape your life in ways that you just don’t imagine when you are young. Life certainly is a rich tapestry…
Writers are among the most wonderful, inspiring bunch…helpful beyond bounds and I have so many thankyou’s to give out for the help, advice, opportunities I have been given.
Short stories in two Anthologies’ and a novel on the way… “ Oh, my Buddha what have we released?” was said of me a few years ago.
The saying “You are the author of your own life” is also very apt for me.
My ultimate wish is to make my children and grandchildren proud of me and my achievements and hopefully to inspire them to take that leap of faith into the unknown and make a difference…

Enjoying life in The Land Of Smiles I am having so much fun researching, finding new, authentic recipes both Thai and International to share with you. New recipes gleaned from those who I have met on my travels or are just passing through and stopped for a while. I hope you enjoy them.
I love shopping at the local markets, finding fresh, natural ingredients, new strange fruits and vegetables ones I have never seen or cooked with. I am generally the only European person and attract much attention and I love to try what I am offered and when I smile and say Aroy or Saab as it is here in the north I am met with much smiling.

Is Carol retired or reThai’d? Either way it sounds wonderful and the cookbook Carol is definitely going to write may even make me want to start cooking properly again!

I think the important thing is that Carol had not retired from life..or cooking thank goodness.. she makes the recipes very easy which is great as I really do not do complicated these days.. She is doing so much work for her cook from scratch posts.. but at least she is also writing her cook book.. x
