Although technically we don’t celebrate Thanksgiving in the UK and Ireland, that does not mean we cannot appreciate the opportunity it offers to formalize our thanks to those who help and support us. I fully appreciate that Smorgasbord Blog Magazine is a collaboration between myself and a number of key contributors who add their experience, support and wonderful content, to entertain and inform readers who visit.

Between now and Thursday I would like to say a special thank you to four of the monthly columnists during 2019 who have added such colour, flavour, insight, humour, adventure and music to my life and to yours. They create new content each month which I know takes a great deal of time. Something as busy people they do not have in abundance.

Today I would like to say a massive thank you to Carol Taylor who has absolutely brought colour and flavour and taste into our lives via the Cookery and Food Column on Wednesdays. I have also thoroughly enjoyed working together with Carol to bring you information on the essential nutrients the body needs to be healthy, and how to put the foods together that are a rich source of these vitamins and minerals. Hard to believe it is over three years since we began our collaboration and it has been a wonderfully rewarding experience.

And of course, it goes without saying that she also is a wonderful friend, despite being thousands of miles away from rainy Ireland.

She is very supportive of her fellow bloggers and is kindness itself, and nothing is too much trouble.. a sort of friend we all wish for.

Normally on Wednesdays since the summer of 2016, Carol Taylor has delighted us with her recipes, either in celebration of a specific food but also to demonstrate how you can include the essential nutrients in your daily diet. We both strongly believe in ‘cooking from scratch’ rather than relying on industrially mass produced foods and sauces.

Carol lives in Thailand and on her own eclectic blog she shares foods that she sources locally and turns into delicious family meals. We have been introduced to Jack Fruit and exotic herbs and spices and I am sure that I am not the only one who now creates Thai green curry and other dishes that Carol explains how to make in great detail.

Carol is passionate about the environment and she has posted some compelling articles on the subject and from time to time enjoyed a bit of a rant (very enjoyable) She has seen the devastating effect of plastics in the ocean and on local wildlife and researches projects that are trying to offset this huge human originating impact on the ocean’s of the world.

On Wednesday’s Carol adopts a more whimsical point of view and shares some quirky segments and sometimes a short story.. this week she shared the battle of the supermarket Christmas adverts, the origins of the artificial Christmas tree, some music and a short story from SC Richmond..

Carol is also a devoted mother and grandmother and here is her delightful granddaughter Lily who often works side by side with Carol in her busy kitchen and is a wonderful cook in her own right. Carol’s son and daughter-in-law run the family farm where turkeys and black chickens are raised, as well as fresh produce. Every week Carol spends a great deal of time and effort and experimentation on the family to make sure that the Food and Cookery Column is kept stocked with wonderful recipes. Enjoying life in The Land Of Smiles I am having so much fun researching, finding new, authentic recipes both Thai and International to share with you. New recipes gleaned from those who I have met on my travels or are just passing through and stopped for a while. I hope you enjoy them.

I love shopping at the local markets, finding fresh, natural ingredients, new strange fruits and vegetables ones I have never seen or cooked with. I am generally the only European person and attract much attention and I love to try what I am offered and when I smile and say Aroy or Saab as it is here in the north I am met with much smiling.

Some of my recipes may not be in line with traditional ingredients and methods of cooking but are recipes I know and have become to love and maybe if you dare to try you will too. You will always get more than just a recipe from me as I love to research and find out what other properties the ingredients I use have to improve our health and wellbeing.

Exciting for me hence the title of my blog, Retired No One Told Me! I am having a wonderful ride and don’t want to get off, so if you wish to follow me on my adventures, then welcome!   4. Lovely to see Carol featured here, Sally. I do find her posts on food very interesting and am following her information shares about innovations to reduce the use of plastic too. I saw a video last night that said that if humans don’t change their ways drastically over the next few years, we have a 20% chance of going extinct by 2100. This view seems supported by the climate change information I have been reading.

    • I think that things are pretty drastic Robbie but climate change itself has divided opinion. I do believe that humans need to clean up their act and the oceans are a good place to start as they sustain billions of people around the world, but there are some excellent initiatives being put in place and I am sure that will only continue to gather pace in the next decade. We have to begin in our own backyards. The younger generation is much more switched on when it comes to this and that is a very good thing.. xxx

    • Thank you, Robbie…was that the Our Planet Matters programme which I have downloaded to watch.? I do think we all need to be aware and maybe just do a little more but with so many good young people with such marvelous innovative ideas that gives me hope xxx

Wow…A thank you sounds woefully inadequate dear Sally for this post…It has been and is such a pleasure working with you, Sally I love producing recipes to go with the minerals and vitamins because it shows just because we have a deficiency in our diet we needn’t eat boring, bland food to address that…I have also learnt and continue to do so about what roles vitamins and minerals play in our wellbeing through your excellent posts…
