Delighted that Silvia Todesco will be joining us each month to share one of her delicious Italian recipes.  We begin a series of summer themed recipes, beginning with the classic rice salad….

Summer: Classic Rice Salad (Insalata de Riso)

I would say, without question, that Rice Salad (“Insalata di Riso”) is the Summer Italian Classic – as much as “Italian meatballs” are a Winter Italian Classic! Every Italian, from Sicily to the North of Italy, knows what an Insalata di Riso is, and all cook it in the same way (with maybe a few exceptions due to the local products of the various Regions). It is a fresh dish, super easy to prepare, and able to be prepared ahead of time. A rice salad would never be missing from any Italian summer party or picnic.

As any other rice salad, this dish is composed of a base of boiled white rice, enriched with meat (frankfurters and ham), fish (tuna), veggies (pickled, fresh, or frozen), eggs, and cheese. Very quick to prepare, perfect for picnics or lunch boxes (as is the tuna and lemon pasta salad) and particularly suitable for parties (as much as “Tartine“) not only because it can be served cool, but especially because it looks colorful and tempting.

As for all the ingredients that this salad needs, I usually make a big bowl of it, so we can consume it during all the week, and my husband loves it because is the perfect alternative to a sandwich to be eaten for lunch at the office.

Even though I usually try to be very precise with the quantities, I would suggest you make this salad by adjusting the ingredients according to your individual tastes (I mean, if you don’t like tuna, you can skip it, and add more ham instead, or viceversa). I will try to give you an idea of how I make it, using pictures, and approximate quantities.

Ingredients for a big bowl

  • 3 cups white rice cooked “al dente”
  • 6-8 frankfurters
  • 2 big cans tuna in oil
  • 1 small pack ham cubes
  • 1 small pack frozen peas, boiled
  • 1 jar Italian mix giardiniera
  • 1 handful cappers
  • 1 cup green olives chopped
  • half jar cocktail onions cut in two
  • a handful of sweet roasted peppers
  • a handful of Asiago cheese cut in cubes
  • a couple of sliced eggs
  • mayonnaise to decorate

Directions

Cook the rice as it was pasta “al dente” (don’t forget to salt the water!), drain it, and rinse it under cool water. Be careful not to overcook the rice because if you let it cook too long, once drained all the grains will stick together, ruining both the taste and appearance of the salad.

I took a pictures of all the ingredients together, but you don’t need to dirty so many dishes, as I did! 😉

IMG_3242Just add all the ingredients to the rice, and mix them together!

Put the salad in the refrigerator and enjoy it when cooled.

Add to your portion some Asiago cheese cubes, few slices of boiled egg, and – if you like some extra taste – a few lines of mayonnaise.

TIPS: – If you decide to make this rice salad for a cook out (which sounds like an awesome idea), remember not to mix the mayonnaise with the salad, as to avoid it spoiling too quickly in the heat.

– If you make this salad for a party, use the eggs and mayonnaise not only as ingredients but as decorations: your dish will look gorgeously alluring!

– According to my personal experience, kids don’t appreciate this plate. My daughters like most of the ingredients of this salad separated, but once mixed all together, they just don’t want to take even a bite!

Integration in a new society is not easy, but it was nice for us to discover how much Italians are loved abroad! And since every new person we have met asked me if I was a good cook, and told me that they love Italian food, well, I decided to share my Italian cooking culture and recipes with you!

Of course, you won’t need to be an expert to follow my recipes! What I’m writing about is our daily menus- recipes made with simple and few ingredients, most of the time cheap and healthy (because the food is not processed).

Plus, considering my passion for cooking, I will also share with you new recipe I discovered in magazines, websites, or shared by friends, and in this case I will always describe you the origin of my posts objects.

In addition, I promise not only to write about Italian food, but especially to give suggestions related to where and how to find the right ingredients and tools you will need. I really hope that you will enjoy my tips!

Welcome to this week’s round up where I share the posts you might of missed, and thank you for taking the time to drop in.

It has been a busy week from a blogging perspective as the new series of Posts from Your Archives gets under way. I did wonder if the previous series which usually featured 12 or so bloggers was restricted due to natural reticence. I have noticed before that you are a shy in coming forward which is why I changed the concept this time so that I went into your archives to select four posts to share.

Boy, did that turn things on its head.. there are now 45 bloggers on the list and I am having the time of my life delving into all the archives to select posts to share. And I am finding some gems that I delighted with.. such as poetry hidden away, wonderful personal stories, travel experiences, family sagas and it just goes to show what a thoroughly talented bunch you are. It has also been great to see lots of discussions going on between everyone about the subject of the posts… loving it.

Clearly it is going to take me a little while to get through all the archives and they will appear over the next three months.. I will try to let you know dates in advance of that, but I am totally privileged to be allowed to access your archives and thank you for trusting me with that. After several attempts to delete my account (following weeks of blocked posts and nasty messages), and then receiving emails welcoming me back to Facebook…..(I do not understand the inner workings of FB Bots!) Anyway I have been back tentatively for the last month, keeping in touch with friends and sharing their posts internally, and so far so good. I am hugely grateful to those of you who have manually shared posts using the URL.. and that has worked thank you.

I am now re-installing my Facebook share button and I would be grateful if you would let me know if you get any messages if you share a post. I know that a lot of other bloggers such as The Story Reading Ape, Debby Gies and  Ellen Best to name a few had exactly the same problem, and there is apparently a reason for it.. Facebook does not want their members to leave the site to go off to visit another, particularly if that site is selling stuff they are not getting a cut of!

Since Smorgasbord is not monetized in any way.. I am hoping that things are now back to normal.

It looks like we will be getting the contractors in to do the back garden this week… fingers crossed.. and we are then 95% finished on our project that began 3 years ago on this house. When I look at the before and after pictures the thought runs through my mind “What were we thinking”…..but it is now a lovely family home that we hope to hand over to someone with lots of kids who will enjoy for many years. Our original plan was to put it on the market next spring but now we will probably go ahead as soon as it is finished.

Delighted that Silvia Todesco will be joining us each month to share one of her delicious Italian recipes.  This month a savoury classic that is a family favourite, very quick and easy to prepare, and I am sure you will enjoy.

Garlic, Olive Oil and Red Pepper Spaghetti…(Spaghetti aglio, olio e peperoncino)

GARLIC, OLIVE OIL AND RED PEPPER SPAGHETTI (Spaghetti aglio, olio e peperoncino)

It is pretty known that Italians are people who enjoy life… eating good food, traveling a lot, and having fun both during the weekends and during the week (many people used to have “happy hour” during the week, usually on Wednesday and Friday nights, but lately also during the other days of the week.)

Did you know that Italy is full of discos? Did you know that if you go to a disco in Italy you can never enter before 11:00 pm (or, it would be really embarrassing to arrive any earlier), and music and dancing never starts before 12:30 or 1:00 a.m.?

Yep, it sounds crazy, but this is true. And you are probably wondering at this point, “Why are you telling me about that?”

BECAUSE after a night awake, after you finish dancing at 4.00 a.m., the most important emotions that rage in Italians minds are: 1) they are a little bit tired 🙂 ; 2) they are starving!!!!

And what’s the food most desired by Italians after a night like that?

SPAGHETTI AGLIO, OLIO E PEPERONCINO…

And at this point you’re probably wondering, why this special dish? And the answer is: because they are cheap, easy and fast to cook, really good for sharing with friends, and for your “night digestion” (especially after one or two drinks too much).

But don’t misunderstand me, I cook this dish for my family at least once a week, and we love it, because it is really delicious!!!

And especially after all the rich festivity meals, why not opt for some food that is more “simple” and “easy” to digest?!

Let’s go find out how to make this new spaghetti sauce recipe. You will be pleasantly surprised by the fact that it will be ready in 20 minutes.

Ingredients (for 4 servings)

  • 1 box of spaghetti
  • garlic there is no “requested quantity”,
  • you usually decide how many cloves according to your taste (I usually pick 6-8 garlic cloves)
  • olive oil (again there is no “requested quantity,
  • you usually decide how much olive oil according to your calories tolerance 🙂 (I usually consider 4-6 tbs. olive oil)
  • crushed red pepper to taste (I usually pick about 3 tps.)
  • 2/3 tbs. canned diced tomato (or pieces of fresh tomatoes)
  • basil to taste (dried or fresh, but preferably fresh).
  • sea salt to taste (for the pasta’s water)

Directions

The preparation of the sauce takes about the time for the pasta to be cooked, so you don’t need to do anything in advance. All the steps will take not more than 20 minutes.

Put the water in a big pot at medium heat. While you wait for the water to boil, peel off the garlic’s cloves, cut them in two pieces.

(If they have the sprout, take it away because usually the sprout makes the garlic taste a little bitter.)

When the water starts to boil, toss the spaghetti in the water and set the timer for the pasta, as directed on the box. With the sauce pan at medium heat, add the olive oil, garlic, crushed red pepper, the basil.

Let the garlic cook for a while (until it becomes blonde, don’t let it brown!).

When the garlic seems golden, add the diced tomatoes and let the sauce cook for a couple minutes more.

Since your spaghetti should be ready, drain the pasta very well, mix them with the sauce, and serve it!!!

Isn’t it easy?!?

LEARNT IT, MADE IT, LOVED IT!

TIPS: – My husband loves garlic, so when I mix the spaghetti to the sauce, I don’t need to take the garlic aside, but if you don’t like eating garlic (but like me, you just like garlic’s flavor), before to mix the spaghetti with the sauce, take the garlic out of the pot: your spaghetti will taste wonderful anyway!!!

– I usually cook this pasta when I’m totally out of other ingredients: it is so easy that rarely I don’t have these few ingredients to make it!

– If you are on a trip to Italy, and you would like to enjoy a simple dish, you can go to whatever restaurant or “trattoria” you want and just ask for an “Aglio e Olio”, and they will immediately know what are you taking about, because this is exactly the way this sauce is known in Italy.

Smorgasbord Blog Magazine – Guest Writer – #Italian Cookery with Silvia Todesco – Fresh Fruit Pie with Sugar Glaze #dessert


Delighted that Silvia Todesco will be joining us each month to share one of her delicious Italian recipes.. This month a fruit pie that uses up that odd pieces of fruit that are passed their best. It is very simple to make with Silvia’s directions and I will certainly be making it next time we have visitors..

Fresh Fruit Pie with Sugar Glaze

I can proudly say that a pie like this has never been seen before because it was invented by my mom many years ago… She prepared it for me and my brother usually at the end of the summer, when all the fruit plants of her garden where ready to harvest at the same time and using all those fruits in a short amount of time was kind of challenging!

A few tablespoons of sugar, few tablespoons of flour, eggs, butter and her leftover fruit and the pie was ready! She would use fresh figs, plums, peaches and apples, but since here in Mid West I have never seen a fresh fig ( 😦 ), I used plums, peaches, pears and apples instead.

What I love about this pie is: 1) that you will need just a tbs. for measuring; 2) that you can really use as much fruit as you like (only important part is to cut it super thin and drain it very well for few hours before arranging the pie; 3) only a bunch of ingredients needed; 4) besides preparing the fruit, it literally takes few minutes to obtain a batter ready for baking; 5) last but not least, that delicious, crunchy layer of sugar glaze that get formed on top of the pie once is cooked. In other word this pie is and extraordinary experience were the wet, moist mixed fruit touches the thin sweet crust, for an epic deliciousness.

Ingredients for a 9” round spring pan

  • 4 eggs
  • 5 tbs. sugar for the batter
  • 1 tbs. sugar for the fruit
  • sugar to taste for the crust
  • 4 tbs. all purpose flour
  • 1 lemon zest and juice
  • 1 stick melted unsalted butter
  • seasonal fruit (cut in small pieces and deprived of the juice)
  • *optional: a few tbs. schnapps

Directions

I didn’t remember how much fruit my mom used for this recipe and her cookbook reported “fruit to taste” so I used what I had available: two pears, 4 plums, one peach and a little apple (the apple is not in the picture because I forgot to add it… Lol… that’s what happens with for kids around).

Start by lining a 9″ round spring pan with parchment paper.

Then grate the lemon zest and set it aside, squeeze the lemon and keep the juice aside.

Cut the fruits in small thin pieces, dust with a bit of sugar and add the lemon juice, stir and let the mix resting in a colander as long as possible to get the fruit draining from its own juice.

Make the batter using the other ingredients: first mix the eggs with the sugar and the lemon zest.

Continue by adding the flour and finally the melted butter at room temperature.

Pour half of the batter in the pan, cover it with the fruit (try to arrange the fruit evenly) and last cover the fruit with the remaining batter. Dust the butter with few tbs. of sugar.

Bake at 360 F. for about 50 minutes or until the sugar looks crystalized.

Serve it when completely cooled off.

Oh my this pie is sooooooooo goooood!

LEARNT IT, MADE IT, LOVED IT!

TIPS: – If you prefer to realize a smaller cake, for the same butter quantity use 4 tbs. sugar and 4 tbs. flour.

– I know for sure my mom usually add to the butter a few tbs. of “grappa” (schnapps) to avoid any egg aftertaste and to dilute the batter. I skipped the “grappa”, and the pie was delicious anyway.

I’m Silvia, I come from Veneto Region (from Bassano del Grappa precisely, one hour by car far from Venice), and I moved to Iowa in 2011, because of my husband’s job necessities.

I’ve grown up watching my great-grandmother, my grandmother, and my mother cooking for my family every day, searching carefully for ingredients and preparing fresh food. That was their way to show us how much they cared (and care) about us, and to carry on a tradition. I cannot recall a festivity without relatives everywhere and tons of delicious food to eat!

But my way was different I graduated with honors at the University of Law of Padua, and (obviously) I became a lawyer. As a professional, I used to work 14 hours a day, and, of course, the time I could dedicate to my family (and cooking) was almost none.

Then fate brought us here, and finally I’ve found myself. All my background came up, and I realized that taking care of my family is the most satisfying job I could do, especially because it entails cooking healthy and good food!

So I started to practice what I learned when I was young, and surprised myself in making all those meals that characterized my youth.

Integration in a new society is not easy, but it was nice for us to discover how much Italians are loved abroad! And since every new person we have met asked me if I was a good cook, and told me that they love Italian food, well, I decided to share my Italian cooking culture and recipes with you!

Of course, you won’t need to be an expert to follow my recipes! What I’m writing about is our daily menus- recipes made with simple and few ingredients, most of the time cheap and healthy (because the food is not processed).

Plus, considering my passion for cooking, I will also share with you new recipe I discovered in magazines, websites, or shared by friends, and in this case I will always describe you the origin of my posts objects.

In addition, I promise not only to write about Italian food, but especially to give suggestions related to where and how to find the right ingredients and tools you will need. I really hope that you will enjoy my tips!

Welcome to the weekly round up of posts that you may have missed.

The social media shenanigans continued this week with Facebook failing to respond and telling those kind enough to share or tag me in comments that I had been reported for abusive content. I had received no response after four weeks of appeals and emails so decided to pull the plug on my account completely late last week. I cannot have other people being embroiled in this, and also I felt that my reputation as an individual and an author was under attack and was potentially damaging. Without recourse to prove my innocence, I feel that it is becoming an issue for Facebook in general. I know that I am not the only person to have been treated in this manner, and I doubt the situation will improve.

I was on Facebook for ten years and had made many friends who have been incredibly supportive. If I was reported for alleged abuse, it would seem that 4000 other contacts did not feel the same way, as they would I am sure simply unfriended me.

Thankfully I can connected to most of those on other platforms such as Twitter, LinkedIn and now the developing MeWe. Because of that there has been no impact on the traffic to the blog, which I am pleased about because of the author promotions that run each week. The plus side is that I notice considerably less junk in my email spam folders which is interesting…..

Smorgasbord Blog Magazine – The Weekly Round Up – Social Media Shenanigans, Spring Flowers, Mexican Getaways, Italian Food, music, humour and Fabulous Guests


Welcome to the weekly round up of posts that you might have missed.

Firstly, an update on the Facebook debacle which only gets worse I am afraid. I know that several of you have been hit by blocked posts that contain links and are still having issues. I can comment, and share posts internally on Facebook but post links are still being blocked.

Disturbingly today that included the link to Debby Gies Sunday Interview which I sent to her in a Direct Message… supposedly private! It was blocked and in bold red told me that it did not meet community standards. I have appealed of course but it does have a warning for us all. Do not disclose private information in a direct message. For example if as they say Facebook is selling our data to health insurance companies, and we mention in a private message about a health issue we have to a friend, and then apply for insurance! Does that sound paranoid? Probably. What about your email address that you send in a message, or your postal address and the dates you will be away on vacation.

I had no illusions about Facebook but they have now embarked on a wholesale censorship programme that is unacceptable. They want you to have a page where they can bombard you with messages to boost your post to thousands of others at a cost. And they want to encourage you to buy from one of their advertisers and when you do, by all accounts you never hear the last of them.

I have friends and family on Facebook and I can at least for the time being share your posts from there. But over the next few weeks as MeWe grows and develops mewe.com/i/sallycronin and the author’s group which now has nearly 50 members https://mewe.com/join/theliterarydivashangout – I will be only using Facebook sparingly to stay in touch and to share others work internally. Eventually, I will be closing my account as I won’t be blackmailed or have any more of my private messages intercepted.

On a brighter note.. I have done the sums and the statistics show that the referrals to the blog is approximately 10%…thankfully most of those who share from Facebook are also contacts on Twitter, LinkedIn, Pinterest or other sites that I am a member of such as MeWe. My main concern was for the book promotions that I post for other authors but after two weeks there has been no change to the response which is a relief.

Thank you for all your support and I appreciate all the shares to FB from here in the past, but I have now permanently removed the share button, as I don’t want you to be faced with messages from FB telling you that it is not allowed. They are intimidating and offer not recourse so I am done.

And as an aside.. new users are asked for a photograph before they are allowed to sign up for an account. It can take several days to get back to you. But in the meantime with facial recognition they can have mined a great deal of information about who you are and your history online. Whilst this does mean that the fake generals and other trolls will not be accepted, it also means that they can pick and choose who they admit to the site and if you do not fit their profile as a potential buyer of the advertising that they send your way… who knows where it will lead!

Smorgasbord Blog Magazine – Guest Writer – Silvia Todesco #Italian Cookery – Oven baked, bacon wrapped, cod fish. Light, crunchy, and so good!


Last week Silvia shared a delicious recipe for a main course Ricotta and Beef Meatballs

This week it is the time of the fish course….

Many times you have heard me complaining about how much I miss seafood living in Midwest. When we lived in Italy we could easily have access to seafood market twice a week just down the stairs of our apartment, along the alleys of the our middle-age walled hometown Cittadella. PD Italy. Anyway, place you leave, new habits to develop! And this super easy, fast, light recipe fits perfect our crave for sea food, satisfying even my little ones, which love the light taste of cod, and adore the aftertaste of baked bacon. One curiosities about Italy is that in the Region I come from (Veneto), cod fish is very popular, and some of the most popular recipe with cod fish are “baccala’ mantecato” and “baccala’ alla veneta“.

Going back to the recipe, this one could really be perfect for any kind of meal, even if you want to impress your guests, and the ingredients are so simple that (besides the cod), you probably already have them all at home! This time I chose a 4-5 servings dose (about two pounds) to feed my numerous family, but ingredients could be easily reduced or increased according to the amount of people you intend to feed ! Moreover, considering the delicate taste of the cod, you can pick whichever side dish to pair with it (a simply salad would be great), but if you have some “extra time” and you like baked potatoes, you can bake them while you bake the cod, only for a longer time.

INGREDIENTS for 4-5 (adults) servings

  • 2 pd. fresh cod fish loins
  • 2-3 tbs. dried or fresh thyme
  • about 1 pd. slices of smoked bacon
  • plain bread crumbs
  • Panko bread crumbs
  • about a cup milk
  • optional: 1 pd. red potatoes peeled and cut in cubes
  • olive oil and sea salt to taste

Directions

In case you decided to make bake potatoes along with the cod, peel and cut them in cubes, spread them with olive oil and panko bread. Arrange the potatoes in a baking sheet previously covered in parchment, keeping the cubes pretty far to each other to obtain a “crunchy” result. Preheat the oven at 420 F. (200 C) – Convection. Be aware that the potatoes will need about 45-60 minutes to get ready, while the cod will need only 30 minutes. So, start baking the potatoes ahead of time, flipping them about every 20 minutes, and start baking the cod only 30 minutes before the potatoes will be done. Remember to salt the potatoes before to serve them.

Back to the cod: Mix the different kinds of breadcrumbs and the thyme to prepare the breading. Cut the cod fish loins in pieces of the quite same dimensions.

Drench the cod pieces in the milk one at a time and bread them in the crumbs mix. Wrap the cod in bacon and arrange it in an oven sheet previously covered with parchment.

Bake the cod for about 15 minutes and then, flip the slides and bake for the same amount of time. Serve still warm with some fresh vegetable and (if you like) with a slice of lemon and/or if you had the time to made the potatoes, with them!

YUMMMMM! LEARNT IT, MADE IT, LOVED IT!

Tip: – baked cod leftovers will be still good, only not as crisp as just baked.

– to make this recipe you can use even frozen cod, but remember to thaw it ahead of time, and that probably the frozen fish will release a lot of water while baking, so the result will be less crunchy than with the fresh one.

Integration in a new society is not easy, but it was nice for us to discover how much Italians are loved abroad! And since every new person we have met asked me if I was a good cook, and told me that they love Italian food, well, I decided to share my Italian cooking culture and recipes with you!

Of course, you won’t need to be an expert to follow my recipes! What I’m writing about is our daily menus- recipes made with simple and few ingredients, most of the time cheap and healthy (because the food is not processed).

Plus, considering my passion for cooking, I will also share with you new recipe I discovered in magazines, websites, or shared by friends, and in this case I will always describe you the origin of my posts objects.

In addition, I promise not only to write about Italian food, but especially to give suggestions related to where and how to find the right ingredients and tools you will need. I really hope that you will enjoy my tips!

I have not posted any links to the blog posts themselves until today.. and hopefully you are reading this because it has gone onto my timeline.

I am not the only person to be affected this week including Debby Gies who you know as a regular contributor here. It is allegedly down to the new policies on fake news and too many external URLS being posted.

Clearly though someone thought that book promotions and health posts were offensive and rather than hit the unfriend button, decided to report me.

That’s life… Going forward I am restricting my own links to other blogger’s posts and once week my round up and hopefully we can maintain the status quo.

In the meantime several of us have also joined MeWe with is a similar interface as Facebook but is more user friendly. They also guarantee that none of our data will be sold. Smorgasbord Blog Magazine – Guest Writer – Silvia Todesco #Italian Cookery – Ricotta and beef meatballs. An Italian classic!-

This week we move on to the main courses with an Italian classic recipe – Ricotta and beef meatballs.

In the collective mind of Americans, spaghetti with meatballs is one of the most popular Italian dishes.

Actually, this is partly true, considering that in Southern Italy they do dress spaghetti with meatballs and sauce.

But since I come from Northern Italy, I grew up eating just the meatballs as a main dish, possibly accompanied by mashed potatoes. The meatball recipe I’m excited to be sharing with you this week is one of my grandmother’s “classics”!

She used to make a lot of meatballs all at one time, and then she cooked part of them immediately by simply frying them in olive oil. The rest were cooked in a tomato sauce, and eaten in the next few days. This is why I give you the quantities for a big pan of meatballs; they are just as delicious as left-overs, or you can freeze them, without loosing any of the taste.

Meatballs are a simply delicious meal, and like many other dishes that I’ve already described in my past posts, this one also finds its roots in the tradition of the Veneto Region.

Ingredients for the meatballs

  • 2 lbs. ground beef (1 kg. carne macinata)
  • 1 lb. plain Italian sausage- without fennel seeds (1/2 Kg. salsiccia)
  • 1 lb. ricotta (1/2 kg. ricotta)
  • 3 eggs (3 uova)
  • 1/4 cup parmesan cheese (1 pugno grana)
  • sea salt to taste, I suggest about 3 pinches (3 bei pizzichi di sale)
  • 2 pinches nutmeg (2 pizzichi noce moscata)
  • 1 pinch dry rosemary (1 pizzico rosmarino)
  • 1 tsp. fresh or dry parsley (1 cucchiaino di prezzemolo)
  • optional: a clove of garlic, finely chopped
  • 1/4 cup bread crumbs (1 pugno pan grattato)
  • all purpose flour for breading (farina per la panatura)
  • olive oil or vegetable oil for frying (olio d’oliva per friggere)

Ingredients for the Tomato Sauce

  • 5 tbs. olive oil (5 cucchiai d’olio d’oliva)
  • 30 oz. (2 cans) tomato sauce (2 barattoli di polpa di pomodoro)
  • 1/2 medium white onion, chopped (mezza cipolla tritata)
  • 1 clove of garlic (1 spicchio d’aglio)
  • salt and pepper to taste (sale e pepe qb)
  • 1 tsp. crushed red pepper (1 cucchiaino peperoncino)
  • 1 tsp. rosemary (1 cucchiaino rosmarino)
  • 1 tsp. basil (1 cucchiaino basilico)

Directions for the meatballs:

In a big bowl mix the ground beef, Italian sausage, ricotta, eggs, parmesan, and spices/herbs (all ingredients except breadcrumbs).

When all the ingredients look amalgamated, add the bread crumbs, and keep mixing.

Put the mix in the refrigerator to chill, and meanwhile prepare the tomato sauce.

Directions for tomato sauce:

In a large pan, brown the chopped onion and the garlic clove in olive oil.

When the onion looks golden, add the tomato sauce and all the herbs/spices.

When the tomato sauce reaches boiling, turn the burner to low heat, and let it cook for about 15-20 minutes, covered.

If the tomato sauce becomes too dry before 15 minutes, add a couple tbs. of water.

While the tomato sauce is cooking, take the meatball mix out of the refrigerator and start to make small balls.

Back to the Meatballs.

Each meatball should be made with about 1 tbs. of meat mixture (remember that the smaller your meatballs are, the taster they will result).

Then flour each meatball evenly.

Into a large pan pour about 5 tbs. of olive, switch on the heat, and when the oil is hot, start to brown the meatballs all around.

Cook at medium heat for about 10 minutes. They have to become brown slowly, so they don’t stay raw inside.

Considering that you will obtain plenty of meatballs, you’ll probably run out of olive oil in your pan. So, I suggest to rinse and wipe out the pan when the oil in the pan begins to burn, and use new oil to brown the remaining meatballs.

You can eat the fried meatballs immediately, or mix them in the tomato sauce.

Once the tomato sauce is ready, take the garlic clove out of the pan, mix the browned meatballs in it, and let them cook together at medium heat for about 5 minutes, to allow the tomato to get the meatballs’ taste!

LEARNT IT, MADE IT, LOVED IT!

Tips:

– I’ve never made spaghetti and meatballs because to me meatballs are already rich enough, but if you want to make them to dress your pasta, you’ll get a really great entree!

– As I told you in the header, if you make the meatballs before dinner, you can just fry them and enjoy them without tomato sauce.

– As side dish, I suggest mashed potatoes or any other veggies. Of course with french fries the combination would be perfect… if you just don’t care about calories 🙂

– If you have meatballs leftover, freeze them only once they are cooked and mixed with the tomato sauce.

But my way was different I graduated with honors at the University of Law of Padua, and (obviously) I became a lawyer. As a professional, I used to work 14 hours a day, and, of course, the time I could dedicate to my family (and cooking) was almost none.

Then fate brought us here, and finally I’ve found myself. All my background came up, and I realized that taking care of my family is the most satisfying job I could do, especially because it entails cooking healthy and good food!

So I started to practice what I learned when I was young, and surprised myself in making all those meals that characterized my youth.

Integration in a new society is not easy, but it was nice for us to discover how much Italians are loved abroad! And since every new person we have met asked me if I was a good cook, and told me that they love Italian food, well, I decided to share my Italian cooking culture and recipes with you!

Of course, you won’t need to be an expert to follow my recipes! What I’m writing about is our daily menus- recipes made with simple and few ingredients, most of the time cheap and healthy (because the food is not processed).

Plus, considering my passion for cooking, I will also share with you new recipe I discovered in magazines, websites, or shared by friends, and in this case I will always describe you the origin of my posts objects.

In addition, I promise not only to write about Italian food, but especially to give suggestions related to where and how to find the right ingredients and tools you will need. I really hope that you will enjoy my tips!
