This week the first part of eliminating the overgrowth and creating a balanced bacteria in your gut by eliminating sugars

There is a ton of dietary advice out there on the net about the “correct” diet to get rid of an overgrowth of Candida, some of which is pretty drastic. Of course, you need to adjust your intake of certain foods, because even if you are prescribed anti-fungal drugs, the pathogen itself will always be present in your gut waiting for another opportunity to take over the body again.

Remember that Candida Albicans exists in all of us at normal levels in the intestines and it can just take a two day stomach upset, which causes an imbalance of healthy flora, to trigger an overgrowth. You also need to think twice before you decide to embark on a crash diet that is nutritionally depleted – this too will cause an imbalance of essential bacteria in the gut.

Prevention

Preventing this overgrowth in the first place is the ideal. Unfortunately, it is not just antibiotics we take that can kill off good bacteria in the gut and allow the Candida to thrive unaffected. It is highly likely that long-term use of medication including the contraceptive pill or HRT may also result in an overgrowth.

Certainly, people 50+ who have been prescribed life-long medication for cholesterol, blood pressure etc may also be at risk of an overgrowth, and it may take generations to understand the impact on our intestinal bacteria.

Please do not stop taking prescribed medication without consultation with your doctor.

If you do have to take antibiotics for a serious infection, then certainly taking a course of probiotics afterwards can be helpful – there are some on the market now that claim to be resistant to the antibiotics so that you can take simultaneously, but you do need to continue them for a period of time afterwards.

Live yogurts are fine for helping to maintain the healthy balance but they are not strong enough to kill an overgrowth, neither are they a magic bullet! You cannot expect to eat a rubbish diet and then have one small pot of yogurt a day in the hopes it will make up for it! The other ingredient in many supermarket pots of yogurt is the hidden sugar levels which of course is Candida’s favourite food.

Just a reminder here about the difference between probiotics and prebiotics if you missed the last post.

Probiotics are the bacteria and yeasts that are classified as ‘friendly’. They inhabit our digestive tract and are a vital part of the process of digesting food and turning it into something that the rest of the body into a form it can utilise. Without a healthy balance of these probiotics systems such as the immune function can be compromised as well as the health of other operating systems and the major organs.  If you eat live dairy products including Kefir or fermented foods such as sauerkraut it will encourage the essential bacteria such as Lactobacilli and Bifidobacteria to flourish.

Prebiotics are processed from insoluble carbohydrates in most fruit and vegetables including Apples (skin on) bananas, beans, artichokes etc (which is why we need to eat several portions of vegetables and fruit daily) This survives the stomach acid and digestive process that some foods such as yogurts might not do, and reaches the gut where it acts like a fertiliser for the existing probiotics and maintains a healthy balance.

Candida’s favourite food and ours, is sugar and the first step to reducing an overgrowth is removing sugar from your diet.

Whatever the reason for your overgrowth of Candida Albicans; you still need to adapt your diet. The main problem is the sugars in industrialised foods will not just satisfy your sweet cravings, but the candida’s too. You will be surprised at how much sugar is included in savoury products that you may buy, and it is important to check labels.

Sugar addiction is recognised as a real and extremely harmful craving mentally and physically.

I am a sugar addict………..along with millions of people around the world, most of whom have struggled with their weight and their health all their lives. Sugar is everywhere – there is no getting away from it. Not just sweets and chocolate, cakes, muffins, bread and cereals but hidden in pasta sauces and most of our savoury favourites. In every shop and in our own kitchen cupboards and fridge – always within reach and as enticing as anything in our lives.

What are sugars?

Sugars are a vital component of the fuel we require to function – unfortunately the modern diet is akin to a 24 hour petrol station and most of us slide effortlessly up to the supercharged pump and pay the very heavy price to fill our tank with it. We then tootle at 20 miles an hour or slower and instead of burning off the fuel we store it in our cells – as fat.

A quick look at the fuel itself. It belongs in the carbohydrate food group, our main source of energy. Carbohydrates are a group of nutrients that contain carbon atoms that have been hydrated by adding water molecules. Carbohydrates include sugars, starches and fibre. The sugar and the starches are metabolised by the body into the simple sugar, glucose.

Glucose molecules circulate in the bloodstream, supplying our cells with the fuel, as they need it. Any additional glucose is converted into glycogen, which is stored in the muscles of the liver. If that storehouse is already full then any excess glucose gets converted into fat.

There are two types of carbohydrate, simple and complex.

Simple carbohydrates contain one or two saccharides such as sucrose (glucose and fructose) which is table sugar and lactose (glucose and galactose) which is the sugar found in milk. This is called a disaccharide.

If the carbohydrate only has one saccharide, it is called monosaccharide such as fructose which is found in fruit and honey. The less saccharides the sweeter the taste so the sweetest is therefore fructose. Whilst moderate consumption of natural sources of simple sugars is absolutely fine including fruit and some honey it is the hidden simple sugars in industrialised foods that are causing the problem.

Complex carbohydrates are known as polysaccharides and they are made of long strings of simple sugars and there are many different kinds. These are the starches and are the most nutritious because they tend to be a component in a food that has other nutrients. The body also breaks down starches into glucose, but it takes longer to digest than the simple sugars which is why they do not cause the same blood sugar fluctuations.

Fibre is a very important carbohydrate because the intestinal tract does not have the enzymes necessary to break down the long chain into individual sugar molecules so it does not get absorbed into the bloodstream – also, fibre slows down the digestion and absorption of sugar, which extends and maintains the energy levels it provides. The source for this nutritious and useful form of complex sugars is found in green vegetables, whole grains, potatoes and other fibre rich foods.

Why use the term industrialised?

Earlier in the post I mentioned the addictive nature of sugars caused largely by the accessibility to those of us in developed countries to industrialised food. I use that term because it is more appropriate than just using the term processed. Natural foods can also go through a form of processing to get to our table, but as long as that process does not include the removal of essential elements or the addition of industrial ingredients, it is unlikely to be harmful.

This industrialisation of our foods is very recent in terms of our evolution. Less than 150 years. To put this into perspective in terms of our body’s genetic make-up.. It can take 10,000 years for a mutation to occur in our DNA to adapt to a new environment. Whilst we have much more access to natural foods all year around, (which would have not been the case 10,000 years ago), we have the disadvantage of now including artificial foods that our body simply cannot process effectively to provide essential nutrients to be healthy.

The body is a sophisticated and complex machine which requires a diverse range of ingredients to process and then pass into the bloodstream to provide the energy we need both on a daily basis and additional power when we need it. If the ingredients you are putting into your body, are not of the chemical make-up essential to make this fuel – you will not only be lacking in energy, but the corrosive nature of the poor ingredients will cause damage and wear on our organs, arterial system and long-time health.

The manufacturers are well aware of our addiction to sugar and manipulate us into eating more.

For some, high sugar/fat foods are a comfort, and the manufacturers are well aware of this.. Take a look at the chocolate adverts on the television and most feature women who turn to chocolate whilst they watch a sad or romantic movie, or because they are day dreaming of love or a sexy hunk dropping off some Black Magic…In this one the girl is wandering through a healthy field of sunflowers, giving the illusion that the flake is too.

It is true that at certain times of the month a woman’s hormone fluctuations can increase that desire for sweet foods.. We tend to misinterpret this as a craving for chocolate, but in fact it is more likely to do with the body wanting to prepare for conception by ingesting high energy foods and changes in blood sugar levels. But the body is looking to receive that fuel from nutritious complex carbohydrates and fruit rather than a Toblerone! (Trust me)

The amount of sugar that we ingest is not just in response to a possible addiction… It is more likely to be habit.

This habit was formed when we were fed as a child. In our house for example we always had a dessert after our main meal and my father was the master of the steamed treacle pudding with lots of sweet custard. He had two teaspoons of sugar in his tea and he had done so since the first cup his mother gave him as a child. It never occurred to him to reduce it to one or none at all. He had a very sweet tooth.

How many biscuits do you automatically reach for when you open a tin or packet? I bet like me it will be at least two…one piece of toast with butter and jam seems a bit lonely too.. A couple is a round number.

Anyway..One of the key indicators that you are eating too much of this high octane fuel, turbo-charged with too much sugar is a candida overgrowth.

Apart from an overgrowth of candida, eating too much sugar puts you at risk of morbid obesity, cancer, diabetes, heart disease, varicose veins, high blood pressure, eye disease, depression and liver and kidney problems.

Sugar intake guidelines for a healthy balanced diet.

First and foremost – these can vary, but for the sake of having some form of measurement to use – men should not consume more than 37.5 gms or 9 teaspoons a day of additional dietary sugar a day. For women it is less around 25grams or 6 teaspoons. That is not really a great deal – to be honest by the time you have had a frosted cereal for breakfast with a couple of spoons of sugar you have had it for the day!!

There are plenty of lists out there with the sugar content of everyday foods. However, the manufacturers can be very clever when hiding the actual level of sugar in their product, one of which is splitting the sugar content into different types and who has time to stand in the aisle of a supermarket and add up the small (very small print) on every item you buy? Food manufacturers are well aware for our new found love for sweet foods and have no problem exploiting it!

A quick guideline – keep to foods that have a total sugar content of 5gms or less per 100gms…and do not buy anything that has syrup at the end of it, or sweetener or cane…..and remember that to your body whatever its name or origins it is all just simply sugar and it will be treated as such.

Low fat foods can be the biggest culprits and certainly fizzy drinks should only be drunk very occasionally. Canned fruits in syrup may seem a low fat option but even the light syrup options have 18grams of sugar! Pasta sauces and certainly most Chinese sauces are high in sugar and if you cannot live without your sweet and sour chicken three times a week, you have a sugar addiction! Your daily bread has sugars and certainly the body will treat the white flour products, white rice and pasta that you eat as sugar.

If you are diabetic then you do need to monitor what you are eating with regard to carbohydrates and sugars and that will be explained to you by your medical advisor.

To be successful you need to move your body away from its addiction to sugars over a period of about four weeks as going cold turkey can end badly!

First keep a food diary for a week and circle everything that contains sugar which includes pasta sauces, cereals, soups, ketchup, jams, biscuits, cakes in fact suspect everything!! And don’t forget the soft drinks that you include regularly.

Begin the process though by halving the amount that you eat immediately.

As most of the sugars will be in foods that are snacks, you will find you can reduce the sugar content by substituting with these natural foods.

Greek yogurt
cottage cheese
Avocados
olives
raspberries
strawberries
melon

Rather than eating sweet biscuits, substitute with high quality oatcakes (check label but typically 45% lower in sugar than other biscuits). Eat with some low fat cottage cheese, sliced avocado or even some thin sliced cheddar.

I am not keen on artificial sweeteners, even those as touted as ‘natural’ including Stevia, which after all has been manufactured to achieve the powdery substance. Whilst some may be deemed safe to use by the authorities, if you have a sugar craving, you are not reducing that by offering it a substitute to refined sugars, as you are still feeding the habit. Your body and Candida, will react to artificial sweeteners in the same way as they do to real sugar.

In summary

  1. Strategy one in your battle with your Candida overgrowth, is to halve the amount of sugar in your diet in the first two weeks.
  2. Reduce the amount again by half in the second two weeks.

A little about me from a nutritional perspective. Although I write a lot of fiction, I actually wrote my first two books on health, the first one, Size Matters, a weight loss programme 20 years ago. Smorgasbord Health Column Rewind – A to Z Common Health Issues – #Acne #Skin


I have had a few emails in recent weeks about acne and some of the more common conditions that we might encounter in our lifetime. I last posted the series two years ago and since many of you are new to the blog since then… I thought it might be useful to repeat the series.

 

Acne is the curse of the teen years and also as we go through hormonal changes later in life.. There is also a strong link to diet, especially the the over indulgence in sugars.

Some organs play a major role in our survival and others can be removed without impacting our general health in any significant way. As we have evolved, so an organ’s function may have changed to accommodate our modern environment, especially if their role is protective as in the case of the liver and the elimination of toxins. In this polluted world our body is under increasing stress and keeping the individual organs healthy ensures the general well-being of the entire body.

The skin

The skin in in fact our largest organ and weighs 12% to 15% of our body weight and has three vital roles to play. It protects us from external contaminants, acts as a temperature and moisture controller and is essential in the elimination of waste products.

There is a complex structure to our skin that is invisible to the naked eye and apart from slapping a bit of moisturiser on last thing at night; most of us are unaware of the crucial role that it plays in our general health.

Because of the skin’s role in the elimination of waste products and as a barrier to external contaminants it comes under increasing stress as we get older. Free radicals attack it from the outside from chemicals in household cleaners, cigarette smoke, pollution and ultra-violet light. From the inside it is the victim of a poor diet low in essential fatty acids, processed foods, food intolerances and toxins produced from an inefficient and under nourished operating system.

Some of the signs of skin under stress are acne, cold sores, eczema, psoriasis, hives, impetigo, shingles, warts and of course wrinkles. Today I am going to be covering acne, a bane for teenagers but can also come back to haunt us in our middle years as we go through another hormonal change.

Acne

I remember as a teenager getting a few spots at certain times of the month but was thankfully clear of major acne outbreaks. I did have a friend at school that was devastatingly affected by the condition and when you are a 16 year old girl or boy it can have a detrimental impact on not just your physical appearance but also your mental and emotional health.

 

Let’s face it, spots that are on your back and covered up on your arms are unsightly and irritating but if your face is covered in blackheads, whiteheads and scarring then it can result in lack of self-esteem that can last for years afterwards. In severe cases acne can lead to severe depression, withdrawal from both school and social activities and suicide.
Unfortunately even when the acne has departed in can leave scarring which varies in severity and often because it is deep and pitted it remains for a lifetime. The reason that it is so deep is because of the inflammation in the dermal layer of the skin which heals abnormally leaving the pitted surface.

The numbers across the western world when added together make acne the 8th common disease in the world. It is estimated that it affects over 80% of teenagers adding up to a huge 600 million people worldwide.

There are a number of suspected causes and I will take a brief look at these.

Hormonal

Most of us will associate spots that appeared during our teen years with hormonal changes after puberty. Sex hormones called androgens result in several changes within the body but also in the skin. The trillions of pores on the surface of our skin are really minute openings into canals called follicles. In each follicle you will find a hair and a sebaceous (oil) gland. This helps keep our skin supple and hydrated and also assists in the disposal of old skin cells that we are shedding continuously.

At puberty and for girls each month the surge of hormones results in a change in the follicle causing them to grow larger and produce more oil. Whilst this affects both sexes in the teen years it also affects women who become pregnant at any age or who suffer from PCOS (polycystic ovary syndrome). PCOS is caused by a woman producing too many of the male androgens affecting her menstrual cycle and ability to become pregnant.

With teenagers it is not just the increase in androgens such as testosterone which can cause acne. At that age there is a growth spurt particularly in boys that can take place between the ages of 16 and 24 and the hormone responsible for this is GH or HGH.

Additionally IGF-1 is a hormone that is similar in structure to Insulin and plays a role in growth in both teenagers and later with a different affect in adults can result in a similar response.

It is unusual for acne to develop after the body has completed its growth cycle in the early to mid-twenties.

Genetic

It is believed that around 75% of acne could be genetic which is supported by studies with twins and also with immediate family members. Polygenic inheritance pattern controls our height, skin colour, eye colour and also it is believed our weight. Rather than just one gene being involved it requires a combination of two or more genes to affect these characteristics. Certain genes have now been identified that could be related to acne and that is an ongoing study.

This genetic link is reinforced by the incidences of severe acne associated with a dysfunctional immune system. This is not lifestyle related but an inherent over sensitivity to bacteria that results in an unusually aggressive immune system response. When bacteria are detected by the body the immune system produces large amounts of inflammatory cytokines. These induce white blood cells to unleash destructive enzymes and free radicals into the site of infection. Because this response is unusually aggressive it can cause damage to the surrounding tissue. This in turn results in another release of cytokines and it becomes a perpetual cycle resulting in long term inflammation and of course the associated acne. In this type of environment bacteria thrive rather than be killed off.

With the other form of genetic dysfunctional immune response the white cells themselves are under powered and do not have the ability to deal with any harmful bacteria that they encounter. Usually white blood cells work on the principal of divide and conquer, they are designed to ingest any bacteria they come across, isolating the bacteria in a special casing called a phagosome and then pumping toxic enzymes inside to kill it. It is then broken up into small particles that are absorbed back into the immune system. The system then takes these particles and designs anti-bodies that will be able to fight future infections of this bacteria.

In a faulty immune system the white cell takes in the bacteria but is not equipped to kill them adequately. They keep trying however, exhausting themselves in the process and dying. This releases the bacteria still alive and allows it to thrive. It also means that the immune system does not get the chance to develop anti-bodies to fight that particular strain of bacteria leading to long term infections.

The most common of the bacterial infections associated with acne is Propionibacterium acnes (P. acnes) is a bacteria that grows deep inside of pores where it obtains its energy from the oil in the follicle canal. It is anaerobic which means that unlike most bacteria it is tolerant to oxygen so the low oxygen, oil rich environment of the follicle is perfect for its growth. Because it forms clumps of bacteria it can block and protect itself within the canal leading to persistent infections into the 20s and beyond. Unfortunately the bacteria have become resistant to a number of the anti-biotics used to treat acne including Penicillin.

Lifestyle.

There have been many assumptions made over the years about acne and its causes. Including the fact that some teenagers do not have a close relationship with cleanliness, that poor diet full of fats and sugars is to blame and the habit of the young today to spend more time indoors rather than out in the fresh air. In reality I believe there is an element of all of these factors involved. And in particular the increase in the use of both male and female facial and body beauty products.

Today we are spoiled for choice when we buy skin products in the pharmacies, supermarkets and online. The prices also vary from very cheap to extremely expensive but unfortunately whilst simple is better, cheap may not be so. Many cheap skin products have ingredients that could irritate skin further. This also applies for make-up that teenage girls are going to use to cover up spots and scars.

Most acne prescribed medication is designed to dry up the oil that feed the bacteria and may be causing the outbreak in the first place. This can result in dry and flaky skin and irritated patches.

The temptation is to buy moisturisers that are heavy and greasy to counteract the dryness but it is better when suffering from acne to use a light weight moisturiser with ingredients such as glycerine that will not clog your pores with more grease. Avoid those that have ingredients such as cocoa butter for example.

Use clean towels every day and dab your face rather than rub to dry.

Change your pillow case every two days.. turning it over in the night between so that it is fresh.

The one lifestyle activity which is definitely implicated in causing skin irritation and increasing the chances of acne is smoking.

You might find the following daily cleansing ritual helpful.

A mild cleanser for the face (ask advice on your skin type) Using your fingers gently massage the skin for a few minutes. Wipe off the excess  with a clean cotton wool wipe. Then rinse your face in lukewarm warm water to remove all the lotion. Pat the skin dry and then apply the light moisturiser. You can use a mild exfoliant (and I mean mild) once or twice a week which can be helpful in cleaning the skin slightly more thoroughly.

These days there are a lot of products on the market but do be careful about just buying off the shelf. Ask advice from a pharmacist and check for side effects.

Medication

There are a number of prescribed medications available now to treat acne including topical creams. Antibiotics are also prescribed but there is a danger that this will then create a resistance to future antibiotics if over used. For girls sometimes being prescribed birth control pills can regulate hormone levels reducing the surge of hormones each month. I do advice however that you do not self-medicate by buying products online. Get professional guidance and if you add to your acne scarring by using the wrong product it will stay with you for life.

Alternative therapies.

My go to essential oil for skincare across all ages is Frankincense and earlier in the year I covered its benefits…Frankincense

You must be extremely careful with your skin as whilst it does a very tough job it is also very delicate. I have found that taking Echinacea for six weeks at a time may help boost immune system function Echinacea

Also you may find taking Grapefruit seed extract to help control an overgrowth of Candida Albicans, which as a fungal infection of the intestines, does impact the efficiency of the immune system.

Topically, apart from the cleansing regime I have already mentioned, you may find that a couple of drops of tea tree oil  mixed with your morning and night time moisturiser may also help kill off the bacteria. Do monitor and if it causes any irritation or redness of the skin stop using.

In addition to echinacea other herbal remedies can be useful for skin complaints including Saw Palmetto and Agnus Castus to help normalise hormonal levels. If you are considering taking any herbal remedy I do suggest that you talk to a qualified assistant in your local health food shop.. They should have received training in the uses for any of their products but do ask first.

Diet

The fact that the incidences of acne is certain cultures that are not exposed to the less healthy aspects of our western diet is virtually non-existent, leads to the assumption that sugars, trans fats and other additives in our food are contributing to acne. It also confirms of course the genetic link to the disease especially when those populations have remained isolated.

As you will have seen there is a genetic link to a dysfunctional immune system that results in persistent acne but there are also dietary and lifestyle related immune system issues that need to be addressed with a balanced diet and exercise.

It is tough when you are a teenager to stick to a really healthy diet when your friends are enjoying burgers, pizzas and other great tasting food. Nobody wants to be the odd person out but tough as it is, it is so important to eat a mainly fresh unprocessed diet with lots of vegetables and fruits with the antioxidants needed for a healthy immune system and of course skin health. Also lean protein and good fats and most importantly plenty of water to keep the skin hydrated.

It is more likely to be sugars rather than healthy fat that is causing food related outbreaks.

Foods that might be helpful in cleansing the body of toxins and therefore reducing the triggers for acne include the following: beetroot, artichoke, hot water and lemon juice first thing in the morning, beans such as chickpeas which helps moderate hormone excretion, fresh vegetables of any kind and fruits such as oranges which are high in Vitamin C. Dried apricots are a good snack as well as nuts and seeds containing zinc which is good for skin healing. Vitamin E is also essential for skin health and having half an avocado on a salad or on its own daily will provide you with that vitamin and healthy fat.

One of the key factors of ridding the body of toxins is drinking water and this also helps prevent the skin from becoming dry and even more irritated.

Smorgasbord Health Column – Candida Albicans – Milk Allergy, Lactose Intolerance, Leaky Gut.


In the posts on Candida Albicans I have mentioned that there are around 120 symptoms associated with an overgrowth. Obviously too many to list here. However, there are a substantial number of health issues that owe their origins to the overgrowth, but it is seldom recognised when those conditions are diagnosed.

When I have worked with clients who have come to me because they have been diagnosed with Milk Allergy, Lactose Intolerance or Leaky Gut syndrome, I am immediately suspicious. Usually when the client has completed the Candida Questionnaire it more often than not supports the link to an overgrowth of the fungus. Sometimes going back years…

Babies who are born to mothers with a Candida overgrowth are rarely infected in the womb but because quite a high percentage of mothers have the Candida present in the birth tract, they acquire it at that point. It is estimated that this is 25% of all mothers.. That means that millions of babies are born already prone to a candida overgrowth.

I would like to see Candida screening for all women who are about to conceive since their overgrowth effects their ability to supply their own body with nutrients, let alone that of a growing foetus.  I am not a scientist but I would bet that this inability to provide adequate nourishment for the baby may be contributory to the number of premature births, and also health problems associated with newborns.

Milk Allergy

Milk or Dairy Allergy is surprisingly common but there is some confusion over milk allergy and lactose intolerance.

A dairy allergy is an immune response that results in inflammation and tissue damage and it can be exhibited in any part of the body causing a wide range of problems. It is an immune response to the protein, Casein, in cow dairy products, that the body perceives as a threat.

It is very rare for there to be the same reaction to the protein found in Goat’s milk which is a different protein. It is usually a genetic problem passed down through the family. If someone is reacting to both the casein in cow’s milk and the different protein in Goat’s milk then it is more likely to be leaky gut syndrome where inappropriate proteins are escaping into the bloodstream and causing an allergic reaction. I go into more detail about leaky gut later but here are the protein specifics for cows and goats.

The difference between cow and goat casein profiles

imagesApha-s1 is the major casein protein present in cow milk, and has been identified as one of the major cow milk allergens. By contrast the major casein in goat milk is ß-casein, and alpha-s2 casein is the main alpha casein present. Goat’s milk contains only trace amounts of an allergenic casein protein, alpha-S1, found in cow’s milk. Goat’s milk casein is more similar to human milk.

The most common symptoms associated with a Milk Allergy in babies are also very serious as they can include the anaphylaxis (severe allergic reaction) which is life threatening and has a very rapid onset. However all new mothers should be aware of the inability to thrive, constant crying, vomiting, wheezing, rashes and stomach upsets.

In children ear infections are very common – the reason being that the Eustachian tube which opens into the back of the throat is not fully developed in children and is easily blocked by mucus which provides a warm breeding ground for bacteria. The inflammation of the tube is usually caused by an allergy – most often dairy, as this is usually the first foods after breast feeding or formula that a child will eat and drink.

There are a number of tests available to confirm milk allergy.

In adults these are the likely symptoms:

  • sinusitis,
  • heartburn/reflux,
  • constipation,
  • diarrhoea
  • irritable bowel syndrome.

Some others are as follows:

  • Abdominal Pain
  • Acne
  • Anxiety
  • Arthritis
  • Cold Sores
  • Fibromyalgia
  • Gas Headaches
  • Heartburn
  • Indigestion
  • Iron deficient anaemia
  • Irritability
  • Joint Pain
  • Lactose intolerance
  • Osteoporosis
  • Poor immune function.

Dairy allergy relates to all types of milk from a cow, cheese, butter, yogurt, cottage cheese, ice cream – it also includes anything else which contains the protein casein such as whey and lactalbumin which are unfortunately found in many processed foods. If you suffer from these symptoms and use industrialised foods you need to read the labels very carefully.

Lactose Intolerance

Lactose intolerance is in fact an enzyme deficiency not an allergy – however lactose intolerance can be the result of a dairy allergy.

Lactase is the enzyme that digests the milk sugar lactose. People with lactose intolerance usually experience an upset stomach, bloating, gas and loose stools. Unfortunately these also mirror symptoms of milk allergy.

If someone has a milk allergy, damage can occur to the digestive tract which inhibits the production of the enzyme lactase therefore adding the lactose intolerance to the list of symptoms.

Milk allergy is estimated to affect 2% of infants and young children in the UK. That percentage decreases as the child ages and it rare to find onset after 12 months. Breastfeeding reduces the risk significantly. Usually 9 out of 10 sufferers will grow out of the allergy by age three. Obviously 1 in 10 children do not outgrow it and these are the children most likely to pass on the response to their own children.

This means that it is only likely to persist in those with a strong family history of allergies especially to other food allergies such as eggs, soya, peanuts or citrus fruits.

If someone is experiencing a severe allergic reaction to a particular food you are likely to see the following:

  • Skin problems such as eczema and dermatitis,
  • Gastro problems such as nausea, vomiting and diarrhoea.
  • Breathing problems such as wheezing, coughing, rhinitis, asthma.

Leaky Gut

In a normal healthy person the small intestine acts like a sieve only permitting the breakdown products of the digestion into the bloodstream. These include the obvious nutrients but also fats, proteins and starches – all of which are very well digested and the larger molecules such as bacterium and toxins are excluded.

As part of this process, Villi, which are finger like projections from the wall of the intestinal tract with even smaller hair like extensions called microvilli, serve as a point of absorption for nutrients. The essential nutrients that the body needs such as glucose, amino acids are carried through the microvilli into the cells of the villus via a transport system comprised of carrier molecules.

If someone is suffering from a leaky gut, the intestinal lining has become inflamed and the microvilli become damaged. They cannot then produce the necessary enzymes and secretions necessary for the absorption of nutrients.

Normally there is a strong wall of cells which prevents the larger molecules containing bacteria and toxins to pass through, however when there is an area of inflammation this structure becomes weakened and these harmful molecules can pass through into the bloodstream. This provokes an automatic response from the immune system which produces antibodies (proteins that locate and attack foreign objects as they are seen as antigens).

If this was a one off, the body would cope with the invasion and the gut would return to normal, but if the intestinal wall is damaged and the process is on-going then the immune system is unable to control the leakage of toxins and they begin to leak back into the liver causing that organ to become stressed and overburdened.

The Liver

I covered the liver in a previous posts on the digestive system (found in the health column directory)  but here is a little reminder of how important this organ is in relation to Candida…

It is the largest gland in the body and plays a really important part in detoxification as well as having many other functions including: producing bile, containing bile acids, which aid digestion, filtering out toxins, such as drugs, alcohol and environmental toxins, storing glucose as glycogen, then breaking it down about 4 hours after a meal to be converted to glucose to regulate blood sugar levels, converting ammonia to urea and removing damaged red blood cells.

Leaky Gut completely overworks the liver because it floods it with additional toxins diminishing the liver’s ability to neutralise chemical substances. When it cannot cope with the level of toxins the liver expels them back into the bloodstream. The circulatory system then pushes the toxins into the connective tissues and muscles where the body stores them to prevent major organ damage. The liver doesn’t get the time to go back and rid the body of the toxins.

You then have a build-up of toxins in the tissues and major organs leading to inflammation and all the symptoms associated with allergic reactions. Including those of milk allergy and lactose intolerance.

Outcome

In fact the person suffering from leaky gut usually test positive for a great many allergies, not because they are allergic to a specific substance or food, but because their immune system is in overdrive – this leads to the chronic forms of conditions such as arthritis and asthma.

The biggest problem is that therapists and doctors will begin to remove essential foods and nutrients from the diet to try and overcome this massive reaction, when in fact they should be treating the root cause which is Candida.

Starving the body of a broad spectrum of nutrients is not the answer, starving the Candida is.

Smorgasbord Health Column – Candida Albicans – Part One -The opportunistic pathogen


It is not possible to do a series on the digestive system without spending time covering our intestines and the delicate balance of bacteria that populate it. More and more research is showing that an imbalance has a profound effect on our overall physical and mental health. There are many diseases that have their root cause in the gut brain of our body.

It is not my intention to lay the blame for all diseases at the feet of Candida Albicans, but it is, I believe, important to understand how an overgrowth of this pathogen can result in a lifetime of health issues. I will share how this impacted me later in the post.

Over the week I will be repeating the Candida series, and I hope that those who have already read two years ago will still find something of interest.

Recently I was asked about the difference between Probiotics and Prebiotics and will explain that now before we get into the issue of this rogue gut inhabitant.

Probiotics are the bacteria and yeasts that are classified as ‘friendly’. They inhabit our digestive tract and are a vital part of the process of digesting food and turning it into something that the rest of the body into a form it can utilise. Without a healthy balance of these probiotics, systems such as the immune function, can be compromised, as well as the health of other operating systems and the major organs.  If you eat live dairy products, including Kefir, or fermented foods such as sauerkraut, it will encourage the essential bacteria such as Lactobacilli and Bifidobacteria to flourish.

Prebiotics are processed from insoluble carbohydrates in most fruit and vegetables including Apples (skin on) bananas, beans, artichokes etc (which is why we need to eat several portions of vegetables and fruit daily) This survives the stomach acid and digestive process that some foods such as yogurts might not do, and reaches the gut where it acts like a fertiliser for the existing probiotics and maintains a healthy balance.

As far as Candida Albicans is concerned this balance in the intestinal flora is crucial and I will explain that as we mover through the upcoming posts.

I was 42, 330lbs/150kilo and with severe health problems in 1994

My acquaintance with Candida Albicans was back in the mid 90’s. I was determined to lose my additional 10 or 11 stone and so began studying nutrition and in the process I decided to create a timeline to identify events and activities in my life from childhood that might have triggered weight gain.

At age 10 I suffered a number of bouts of tonsillitis, and was given penicillin at least five times before the tonsils were removed. Before these infections I was a normal size child – three months after the operation I was three stone overweight. Something had changed.

It took me a while, once I began to study nutrition, to join the dots, and I came to the conclusion that this first trigger, and subsequent thrush and cystitis infections, crash dieting, sugar and bread cravings, were linked in some way. Candida Albicans began to get more publicity, and I compared my symptoms with those described and I experienced at least 80% of them.

My first book that I originally wrote as a journal,was published in 2001. Size Matters  was the story of my journey of my weight loss from 330lbs to 180lbs, and how this most common human fungal pathogen was largely responsible for my weight and health problems.

Before I cover the scary bit – because it is overwhelming to think that there is this predatory pathogen inside the majority of us (mainly living the western world and our high sugar diet!) There are steps we can all take to ensure that our diet and lifestyle support our immune system by keeping the intestines in balance with plenty of beneficial bacteria to maintain Candida in its proper proportions.

We are all familiar with the concerns about the rain forests and their devastation and long lasting consequences for our planet. Well our gut is an eco-system too – teeming with life that is as varied and as exotic as in any rain forest. And, like the many species that are at risk in the wider world, our bacteria that populate our gut and keep us alive, are under threat too.

70% of humans contain Candida Albicans in small amounts in our gut and urinary tract. In those amounts it is harmless – however – advances in medical treatment, and our modern diet, have given this opportunistic pathogen all it needs to develop from harmless colonies to massive overgrowths. It is also referred to as Monilia, Thrush, Candidiasis and Yeast Infection.

The most at risk are those with an already compromised immune system, but because of our high sugar, white carbohydrate and processed foods in our diets, most of us are now at risk.

We have also been treated with broad spectrum antibiotics for the last 65 years, as well as newer drugs that we take long term, that manipulate our hormonal balances. We as yet do not know the long term impact on our bodies of the modern drugs we take, and it may be generations before we do. Which is why there is now great concern that the pathogens are becoming more and more resistant to drugs such as antibiotics.

The eco-system which is our gut.

Our intestinal tract, like our hearts, brains, livers, kidneys etc is a major organ. Some refer to it as the ‘gut brain’ – How many times do you mention your gut feelings? Without it there would be no way to process the raw ingredients we eat to keep our immune system healthy enough to protect us from pathogens. The good bacteria or flora in the gut, two of which are, Bifidobacteria bifidum and Lactobaccillus acidophilus normally keep the Candida in balance.

In most cases antibiotics are broad spectrum, not specific, because, without a lab test it is difficult to tell the specific strain of bacteria responsible for an infection. The use of broad spectrum drugs usually guarantees that the bacteria in question will be killed off.

  • Unfortunately, not only the bad bacteria are killed off but also the good bacteria in your gut.
  • Candida remains unaffected because it is not bacteria it is a yeast and this is where it takes full advantage.

What happens to Candida to allow it to take over?

If Candida yeast is allowed to grow unchecked, it changes from its normal yeast fungal form to a mycelial fungal form that produces rhizoids. These long, root-like components are capable of piercing the walls of the digestive tract and breaking down the protective barriers between the intestines and the blood. This breakthrough allows many allergens to enter the blood stream causing allergic reactions. Mucus is also formed around major organs and in the lining of the stomach. This prevents your digestive system from functioning efficiently. The result is poorly digested food and wasted nutrients. Your body begins to suffer a deficiency of these nutrients and it leads to chronic fatigue, an impaired immune system and disease.

There would appear to be a strong link between this overgrowth of Candida Albicans to a huge list of symptoms and illness. Here is a snapshot.

  • People who are suffering from Chronic Fatigue Syndrome or ME usually test positive for Candida although there are also other issues involved in this complex condition.
  • Numbness, burning or tingling in fingers or hands.
  • Insomnia,
  • Abdominal pain,
  • Chronic constipation or diarrhoea,
  • Bloating,
  • Irritable Bowel Syndrome.
  • Thrush and Cystitis,
  • Sexual dysfunction and loss of sexual drive.
  • Endometriosis or infertility
  • PMS and heavy and painful periods.
  • Depression and panic attacks
  • Irritablity when hungry.
  • Unexplained muscle or joint pains often diagnosed with arthritis.
  • Headaches and mood swings.
  • Chronic rashes or hives
  • Food intolerance.
  • Liver function due to build up of toxins leading to  chronic fatigue, discomfort and depression.

The list is virtually endless – which just adds to the confusion at the time of diagnosis.

If you are experiencing any of these symptoms then you may have a varying degree of overgrowth.

Smorgasbord Invitation 2017 Review – The Top Health Post – Candida and the link to Milk Allergy, Lactose Intolerance and Leaky Gut


For the fourth year running this post on Candida Albicans was the top health post.  This would tend to indicate that the figures provided for those suffering from an overgrowth of Candida Albicans is in the region of 65 to 75% of us in the Western world.. Despite being a fungus… it is important to remember that its favourite food in the world.. like so many of us… is sugar!

If you consider the list of common ailments resulting from an imbalance of healthy and healthy bacteria and fungus such as candida it becomes very clear how important the health of our gut is and that we need to take more care of it.

In the posts on Candida Albicans I have mentioned that there are around 120 symptoms associated with an overgrowth. Obviously too many to list here. However, there are a substantial number of health issues that owe their origins to the overgrowth but it is seldom recognised when those conditions are diagnosed.

When I have worked with clients who have come to me because they have been diagnosed with Milk Allergy, Lactose Intolerance or Leaky Gut syndrome I am immediately suspicious. Usually when the client has completed the Candida Questionnaire it more often than not supports the link to an overgrowth of the fungus. Sometimes going back years..Babies who are born to mothers with a Candida overgrowth are rarely infected in the womb but because quite a high percentage of mothers have the Candida present in the birth tract, they acquire it at that point. It is estimated that this is 25% of all mothers.. That means that millions of babies are born already prone to a candida overgrowth.

I would like to see Candida screening for all women who are about to conceive since their overgrowth effects their ability to supply their own body with nutrients, let alone that of a growing foetus.  I am not a scientist but I would bet that this inability to provide adequate nourishment for the baby may be contributory to the number of premature births and also health problems associated with newborns.

When I have worked with clients who have come to me because they have been diagnosed with Milk Allergy, Lactose Intolerance or Leaky Gut syndrome I am immediately suspicious. Usually when the client has completed the Candida Questionnaire it more often than not supports the link to an overgrowth of the fungus. Sometimes going back years..Babies who are born to mothers with a Candida overgrowth are rarely infected in the womb but because quite a high percentage of mothers have the Candida present in the birth tract, they acquire it at that point. It is estimated that this is 25% of all mothers.. That means that millions of babies are born already prone to a candida overgrowth.

I would like to see Candida screening for all women who are about to conceive since their overgrowth effects their ability to supply their own body with nutrients, let alone that of a growing foetus.  I am not a scientist but I would bet that this inability to provide adequate nourishment for the baby may be contributory to the number of premature births and also health problems associated with newborns.

MILK ALLERGY.

Milk or Dairy Allergy is surprisingly common but there is some confusion over milk allergy and lactose intolerance.

A dairy allergy is an immune response that results in inflammation and tissue damage and it can be exhibited in any part of the body causing a wide range of problems. It is an immune response to the protein, Casein, in Cow dairy products that the body perceives as a threat. It is very rare for there to be the same reaction to the protein found in Goat’s milk which is a different protein. It is usually a genetic problem passed down through the family. If someone is reacting to both the casein in cow’s milk and the different protein in Goat’s milk then it is more likely to be leaky gut syndrome where inappropriate proteins are escaping into the bloodstream and causing an allergic reaction. I go into more detail about leaky gut later but here are the protein specifics for cows and goats.

THE DIFFERENCE BETWEEN COW AND GOAT CASEIN PROFILES.

imagesApha-s1 is the major casein protein present in cow milk and has been identified as one of the major cow milk allergens. By contrast the major casein in goat milk is ß-casein, and alpha-s2 casein is the main alpha casein present. Goat’s milk contains only trace amounts of an allergenic casein protein, alpha-S1, found in cow’s milk. Goat’s milk casein is more similar to human milk.

The most common symptoms associated with a Milk Allergy in babies are also very serious as they can include the anaphylaxis (severe allergic reaction) which is life threatening and has a very rapid onset. However all new mothers should be aware of the inability to thrive, constant crying, vomiting, wheezing, rashes and stomach upsets.

In children ear infections are very common – the reason being that the Eustachian tube which opens into the back of the throat is not fully developed in children and is easily blocked by mucus which provides a warm breeding ground for bacteria. The inflammation of the tube is usually caused by an allergy – most often dairy as this is usually the first foods after breast feeding or formula that a child will eat and drink.
There are a number of tests available to confirm milk allergy.

In adults these are the likely symptoms: sinusitis, heartburn/reflux, constipation, diarrhoea and irritable bowel syndrome. Some others are as follows:

Abdominal Pain – Acne – Anxiety – Arthritis – Cold Sores – Fibromyalgia – Gas Headaches – Heartburn – Indigestion – Iron deficient anaemia – Irritability – Joint Pain
Lactose intolerance – Osteoporosis – Poor immune function.

Dairy allergy relates to all types of milk from a cow, cheese, butter, yogurt, cottage cheese, ice cream – it also includes anything else which contains the protein casein such as whey and lactalbumin which are unfortunately found in many processed foods. If you suffer from these symptoms and use industrialised foods you need to read the labels very carefully.

LACTOSE INTOLERANCE

Lactose intolerance is in fact an enzyme deficiency not an allergy – however lactose intolerance can be the result of a dairy allergy.

Lactase is the enzyme that digests the milk sugar lactose. People with lactose intolerance usually experience an upset stomach, bloating, gas and loose stools. Unfortunately these also mirror symptoms of milk allergy.

If someone has a milk allergy, damage can occur to the digestive tract which inhibits the production of the enzyme lactase therefore adding the lactose intolerance to the list of symptoms.

Milk allergy is estimated to affect 2% of infants and young children in the UK. That percentage decreases as the child ages and it rare to find onset after 12 months. Breastfeeding reduces the risk significantly. Usually 9 out of 10 sufferers will grow out of the allergy by age three. Obviously 1 in 10 children do not outgrow it and these are the children most likely to pass on the response to their own children.

This means that it is only likely to persist in those with a strong family history of allergies especially to other food allergies such as eggs, soya, peanuts or citrus fruits.
If someone is experiencing a severe allergic reaction to a particular food you are likely to see the followin: Skin problems such as eczema and dermatitis, gastro problems such as nausea, vomiting and diarrhoea. Breathing problems such as wheezing, coughing, rhinitis, asthma.

LEAKY GUT
In a normal healthy person the small intestine acts like a sieve only permitting the breakdown products of the digestion into the bloodstream. These include the obvious nutrients but also fats, proteins and starches – all of which are very well digested and the larger molecules such as bacterium and toxins are excluded.

As part of this process, Villi, which are finger like projections from the wall of the intestinal tract with even smaller hair like extensions called microvilli, serve as a point of absorption for nutrients. The essential nutrients that the body needs such as glucose, amino acids are carried through the microvilli into the cells of the villus via a transport system comprised of carrier molecules.

If someone is suffering from a leaky gut the intestinal lining has become inflamed and the microvilli become damaged. They cannot then produce the necessary enzymes and secretions necessary for the absorption of nutrients.

Normally there is a strong wall of cells which prevents the larger molecules containing bacteria and toxins to pass through, however when there is an area of inflammation this structure becomes weakened and these harmful molecules can pass through into the bloodstream. This provokes an automatic response from the immune system which produces antibodies (proteins that locate and attack foreign objects as they are seen as antigens).

If this was a one off, the body would cope with the invasion and the gut would return to normal, but if the intestinal wall is damaged and the process is on-going then the immune system is unable to control the leakage of toxins and they begin to leak back into the liver causing that organ to become stressed and overburdened.

THE LIVER

I talked about the liver in a previous post but here is a little reminder of how important this organ is in relation to Candida.. It is the largest gland in the body and plays a really important part in detoxification as well as having many other functions including: producing bile, containing bile acids, which aid digestion, filtering out toxins, such as drugs, alcohol and environmental toxins, storing glucose as glycogen, then breaking it down about 4 hours after a meal to be converted to glucose to regulate blood sugar levels, converting ammonia to urea and removing damaged red blood cells.

Leaky Gut completely overworks the liver because it floods it with additional toxins diminishing the liver’s ability to neutralise chemical substances. When it cannot cope with the level of toxins the liver expels them back into the bloodstream. The circulatory system then pushes the toxins into the connective tissues and muscles where the body stores them to prevent major organ damage. The liver doesn’t get the time to go back and rid the body of the toxins.

You then have a build-up of toxins in the tissues and major organs leading to inflammation and all the symptoms associated with allergic reactions. Including those of milk allergy and lactose intolerance.

In fact the person suffering from leaky gut usually test positive for a great many allergies, not because they are allergic to a specific substance or food but because their immune system is in overdrive – this leads to the chronic forms of conditions such as arthritis and asthma. The biggest problem is that therapists and doctors will begin to remove essential foods and nutrients from the diet to try and overcome this massive reaction when in fact they should be treating the root cause which is Candida. Starving the body of a broad spectrum of nutrients is not the answer, starving the Candida is.

I have lived with a severe overgrowth of Candida – I was only in my early 40’s but I felt so old – no system in my body seemed to be functioning efficiently, and it kept getting worse, however much sugar I put into my mouth for energy!!! 18 years ago, doctors who unfortunately were not all savvy about nutrition were not helpful. I was at my wits end until I managed to join the dots and researched Candida for myself.

As I mentioned in my last post it used to be the practice to come off all yeast and sugars, natural or otherwise and for six weeks or so follow a very rigid diet. I do think that it is a good idea to reduce the levels of your yeast in the diet simply because it comes in combination in so many processed foods with sugar, who as regular readers know, I consider to be the real cause behind so much of our ill health today.

Things have moved on – the fact is that most natural produce is absolutely fine to eat. This includes mushrooms which as a fungus are usually one of the first foods to be banned on a Candida Diet.

In the last 18 years I have experimented with natural ingredients in and out of my diet and I have found no reaction to mushrooms or any other natural food on my Candida levels. I have however, reacted quickly to drinking too much alcohol, eating cakes, sweets, biscuits, fizzy drinks, processed sauces, ketchup, soy sauce, milk chocolate with low cocoa content, processed cheap fruit juices etc. In the case of alcohol it is possibly the combination of yeast and sugar (or too many glasses) – and if you look at the ingredients of a great many processed foods it is the sugar content that is likely to be the main culprit.

I have some key indicators for a rise in levels of Candida overgrowth in my system. The inside of my ears begins to itch irritatingly and my eyes start watering. If I continue to consume sugars in excess I can develop thrush symptoms.

MUSHROOMS.

Mushrooms might be a fungus but they are also immune boosting foods and some are actively anti-candida. Mushrooms are on my Food Pharmacy list and I eat at least two or three times a week. Especially on a non-meat day as they have an impressive list of nutrients that make them a great alternative.

According to the ancient Egyptians, over 4,000 years ago, eating mushrooms granted you immortality. The pharaohs even went as far as to ban commoners from eating these delicious fungi but it was probably more to guarantee that they received an ample supply. Mushrooms have played a large role in the diet of many cultures and there is evidence that 3,000 years ago certain varieties of mushrooms were used in Chinese medicine and they still play a huge role in Chinese cuisine today.

There are an estimated 20,000 varieties of mushrooms growing around the modern world, with around 2,000 being edible. Of these, over 250 types of mushroom have been recognised as being medically active or therapeutic.

More and more research is indicating that certain varieties, such as Shitake and Maitake, have the overwhelming potential to cure cancer and AIDS and in Japan some of the extracts from mushrooms are already being used in mainstream medicine.

Apart from their medicinal properties, mushrooms are first and foremost an excellent food source. They are low in calories, high in B vitamins, Vitamin C, calcium, iron, phosphorus, potassium and zinc – and supply us with protein and fibre. They are versatile and they are easy to cook and blend with other ingredients on a daily basis. For vegetarians they provide not only protein but also the daily recommended amount of B12 a vitamin often lacking in a non-meat diet.

Mushrooms of all varieties will boost your immune system in the fight against Candida and are more beneficial in your diet than out of it.

MATURED CHEESE

Aged cheese is usually banned from a yeast free and sugar free diet but I have found no major problems when using as part of a balanced diet. It is unlikely that by the time the cheese has digested and reached the gut that it is in a form that is utilised by the fungus. Cheese on toast or cauliflower cheese once or twice a week should not cause you a problem and provides variety and nutrients to feed your body.

I do caution you however if you have a weight problem and are trying to lose weight.. A little cheese from time to time is okay but how many of us actually have that kind of restraint?  Also if you suffer from gallbladder disease you will have to monitor your fat intake carefully and you will find that cutting right back on cheese to a very occasional use to be the best option.

So, now you have bread still in your diet (yeast and sugar free such as Irish Soda Bread) and also mushrooms and cheese.

There is a ton of dietary advice out there on the net about the “correct” diet to get rid of an overgrowth of Candida, some of which is pretty drastic. Of course, you need to adjust your intake of certain foods because even if you are prescribed anti-fungal drugs the pathogen itself will always be present in your gut waiting for another opportunity to take over the body again.

Remember that Candida Albicans exists in all of us at normal levels in the intestines and it can just take a two day stomach upset, which causes an imbalance of healthy flora, to trigger an overgrowth. You also need to think twice before you decide to embark on a crash diet that is nutritionally depleted – this too will cause an imbalance of essential bacteria in the gut.

Preventing this overgrowth in the first place is the ideal. Unfortunately, it is not just antibiotics we take that can kill off good bacteria in the gut and allow the Candida to thrive unaffected. It is highly likely that long-term use of medication including the pill or HRT may also result in an overgrowth. Certainly, people 50+ who have been prescribed life-long medication for cholesterol, blood pressure etc may also be at risk of an overgrowth, and it may take generations to understand the impact on our intestinal bacteria.

If you do have to take antibiotics for a serious infection, then certainly taking a course of probiotics afterwards can be helpful – there are some on the market now that claim to be resistant to the antibiotics so that you can take simultaneously, but you do need to continue them for a period of time afterwards. Live yoghurts are fine for helping to maintain the healthy balance but they are not strong enough to kill an overgrowth, neither are they a magic bullet! You cannot expect to eat a rubbish diet and then have one small pot of yoghurt a day in the hopes it will make up for it! The other ingredient in many supermarket pots of yoghurt is the hidden sugar levels which of course is Candida’s favourite food.

Just a reminder here about the difference between probiotics and prebiotics if you missed the last post.

They inhabit our digestive tract and are a vital part of the process of digesting food and turning it into something that the rest of the body into a form it can utilise. Without a healthy balance of these probiotics systems such as the immune functionn can be compromised as well as the health of other operating systems and the major organs.  If you eat live dairy products including Kefir or fermented foods such as sauerkraut it will encourage the essential bacteria such as Lactobacilli and Bifidobacteria to flourish.

Prebiotics are processed from insoluble carbohydrates in most fruit and vegetables including Apples (skin on) bananas, beans, artichokes etc (which is why we need to eat several portions of vegetables and fruit daily) This survives the stomach acid and digestive process that some foods such as yogurts might not do, and reaches the gut where it acts like a fertiliser for the existing probiotics and maintains a healthy balance.

Whatever the reason for your overgrowth of Candida Albicans; you still need to adapt your diet. The main problem is the sugars in processed foods which is not just satisfy your sweet cravings but the candida’s too.

The first and most major adaptation is the removal of these prepared foods from the diet. This includes foods that are assumed to be savoury such as jars of pasta sauce (4 or 5 teaspoons of sugar), tomato ketchup etc. And of course certain breakfast cereals……Cooking everything from scratch and including prebiotic foods such as vegetable carbohydrates with their skins, can be more time consuming but if you cook double portions of meat, starch and other vegetables, and either eat two days in a row or freeze for later use, you need only cook three or four times a week.

Controlling the fungus without starving your body.

Over the years clients have arrived at their first appointment, tired, depressed, still suffering from skin problems, infections etc who have been following the most rigid diet possible to eradicate the overgrowth of candida. They are surviving on a narrow range of foods, greatly reduced nutritional variety and values, and are terrified of putting certain foods in their mouths.

The problem is balance – starving the fungus is essential. But, in the process you can also starve the body of the nutrients it requires to rebuild the immune system which you need to work on your behalf internally. The overgrowth is not restricted to the intestines, as I described in the last post – the symptoms are caused because it has got into the bloodstream and has free access to the entire body. You are going to need the immune system’s power to push back the fungus to the gut where it belongs at normal levels.

For example – I gave up yeast products back in the late 90’s despite my craving for bread which was almost as bad as my desire for sugars. However as a yeast Candida, it is the   sugars it needs to sustain its rapid growth and to maintain its hold on the body. The first inclination is to strip the diet of anything containing those two ingredients, natural or otherwise. However recent research is indicating that not all yeast or fungal foods are a problem.

I experimented with mushrooms for example, whilst eliminating sugars except for fruit. I discovered that I did not appear to react to mushrooms which is great news as they are nutritionally dense. Agreed, you can get most of the vitamins and minerals from other sources but in my opinion the body needs its nutrients from a wide variety of foods and during a period of recovery when your body is weakened already by a fungal overgrowth you need all the help you can get.

Today however, the one staple that most of us find the hardest to give up. Our daily bread.

Industrialised bread, particularly the cheap, plastic wrapped, white flour variety with its abundance of additives including sugars is perfect fodder for Candida. I enjoy and include some white breads in my diet…occasionally. The supermarket in-house bakeries are producing terrific artisan breads and also imported varieties such as baguettes and Panini.. All without preservatives and additives so tend to go stale in 24 hours unless you freeze. I still cannot eat regularly which is why I make my own yeast and sugar free Irish Soda bread.

Luckily I was introduced to Irish Soda bread in the late 90’s which is yeast free and has little sugar, but today there is a wide range of yeast and sugar free breads available in health food shops and online as well as super recipes to make at home. These can be adapted to include additional nutritional essentials in the form of seeds and nuts. I made a couple of loaves yesterday, one for the week and one in the freezer – cost about £1 a loaf to make. There are also unleavened breads – corn and wholegrain tortillas etc that you can enjoy too.

Apart from being able to feel that you are at least including normal foods – bread does not stand alone – we put things on it – an egg cooked in a variety of ways is a great supper on toast and is good for you. Sandwiches made with your own bread for lunch with fresh salad filling and cooked chicken or tinned tuna etc are far better than buying already prepared and expensive varieties with unknown ingredient.

This is just one adjustment to your daily diet that will feed your body but starve the fungus.

Next time some foods you should adapt or exclude and some foods that should be absolutely included to boost your immune system to combat this persistent parasite. I will also give you the link to a shopping list that includes most of the nutrients we need for a balanced diet.

It is not possible to do a series on the digestive system without spending time covering our intestines and the delicate balance of bacteria that populate it. More and more research is showing that an imbalance has a profound effect on our overall physical and mental health. There are many diseases that have their root cause in the gut brain of our body.

It is not my intention to lay the blame for all diseases at the feet of Candida Albicans but it is I belief important to understand how an overgrowth of this pathogen can result in a lifetime of health issues. I will share how this impacted me later in the post.

Over the next few posts I will be repeating the Candida series and I hope that those who have already read two years ago will still find something of interest.

Recently I was asked about the difference between Probiotics and Prebiotics and will explain that now before we get into the issue of this rogue gut inhabitant.

Probiotics are the bacteria and yeasts that are classified as ‘friendly’. They inhabit our digestive tract and are a vital part of the process of digesting food and turning it into something that the rest of the body into a form it can utilise. Without a healthy balance of these probiotics systems such as the immune functionn can be compromised as well as the health of other operating systems and the major organs.  If you eat live dairy products including Kefir or fermented foods such as sauerkraut it will encourage the essential bacteria such as Lactobacilli and Bifidobacteria to flourish.

As far as Candida Albicans is concerned this balance in the intestinal flora is crucial and I will explain that as we mover through the upcoming posts.

I am 42, 330lbs/150kilo and with severe health problems in 1994

My acquaintance with Candida Albicans was back in the mid 90’s. I was determined to lose my additional 10 or 11 stone and so began studying nutrition and in the process I decided to create a timeline to identify events and activities in my life from childhood that might have triggered weight gain.

At age 10 I suffered a number of bouts of tonsillitis and was given penicillin at least five times before the tonsils were removed. Before these infections I was a normal size child – three months after the operation I was three stone overweight. Something had changed.

It took me a while once I began to study nutrition, but slowly over a period of about five years I began to join the dots and came to the conclusion that this first trigger and subsequent thrush and cystitis infections, crash dieting, sugar and bread cravings were linked in some way. Candida Albicans began to get more publicity and I compared my symptoms with those described and I experienced at least 80% of them.

My first book that I originally wrote as a journal,was published in 2001.Size Matters  was the story of my journey of my weight loss from 330lbs to 180lbs, and how this most common human fungal pathogen was largely responsible for my weight and health problems.

Before I cover the scary bit – because it is overwhelming to think that there is this predatory pathogen inside the majority of us (mainly living the western world and our high sugar diet!) There are steps we can all take to ensure that our diet and lifestyle support our immune system by keeping the intestines in balance with plenty of beneficial bacteria to maintain Candida in its proper proportions.

We are all familiar with the concerns about the rain forests and their devastation and long lasting consequences for our planet. Well our gut is an eco-system too – teeming with life that is as varied and as exotic as in any rain forest. And, like the many species that are at risk in the wider world, our bacteria that populate our gut and keep us alive are under threat too.

70% of humans contain Candida Albicans in small amounts in our gut and urinary tract. In those amounts it is harmless – however – advances in medical treatment and our modern diet have given this opportunistic pathogen all it needs to develop from harmless colonies to massive overgrowths. It is also referred to as Monilia, Thrush, Candidiasis and Yeast Infection. The most at risk are those with an already compromised immune system, but because of our high sugar, white carbohydrate and processed foods in our diets, most of us are now at risk. We also have been treated with broad spectrum antibiotics for the last 65 years as well as newer drugs that we take long term, that manipulate our hormonal balances. We as yet do not know the long term impact on our bodies of the modern drugs we take and it may be generations before we do. Which is why there is now great concern that the pathogens are becoming more and more resistant to drugs such as antibiotics.

The eco-system which is our gut.

Our intestinal tract, like our hearts, brains, livers, kidneys etc is a major organ. Some refer to it as the gut brain – How many times do you mention your gut feelings? Without it there would be no way to process the raw ingredients we eat to keep our immune system healthy enough to protect us from pathogens. The good bacteria or flora in the gut, two of which are, Bifidobacteria bifidum and Lactobaccillus acidophilus normally keep the Candida in balance.

In most cases antibiotics are broad spectrum, not specific, because, without a lab test it is difficult to tell the specific strain of bacteria responsible for an infection. The use of broad spectrum drugs usually guarantees that the bacteria in question will be killed off. Unfortunately, not only the bad bacteria are killed off but also the good bacteria in your gut. Candida remains unaffected because it is not bacteria it is a yeast and this is where it takes full advantage.

What happens to Candida to allow it to take over?

If Candida yeast is allowed to grow unchecked, it changes from its normal yeast fungal form to a mycelial fungal form that produces rhizoids. These long, root-like components are capable of piercing the walls of the digestive tract and breaking down the protective barriers between the intestines and the blood. This breakthrough allows many allergens to enter the blood stream causing allergic reactions. Mucus is also formed around major organs and in the lining of the stomach. This prevents your digestive system from functioning efficiently. The result is poorly digested food and wasted nutrients. Your body begins to suffer a deficiency of these nutrients and it leads to chronic fatigue, an impaired immune system and disease.

There would appear to be a strong link between this overgrowth of Candida Albicans to a huge list of symptoms and illness. Here is a snapshot.

  • People who are suffering from Chronic Fatigue Syndrome or ME usually test positive for Candida although there are also other issues involved in this complex condition.
  • Numbness, burning or tingling in fingers or hands.
  • Insomnia,
  • Abdominal pain,
  • Chronic constipation or diarrhoea,
  • Bloating,
  • Irritable Bowel Syndrome.
  • Thrush and Cystitis,
  • Sexual dysfunction and loss of sexual drive.
  • Endometriosis or infertility
  • PMS and heavy and painful periods.
  • Depression and panic attacks
  • Irritablity when hungry.
  • Unexplained muscle or joint pains often diagnosed with arthritis.
  • Headaches and mood swings.
  • Chronic rashes or hives
  • Food intolerance.
  • Liver function due to build up of toxins leading to  chronic fatigue, discomfort and depression.

The list is virtually endless – which just adds to the confusion at the time of diagnosis.

If you are experiencing any of these symptoms then you may have a varying degree of overgrowth.
