Wow…Another New Year has begun where does the time go? It does seem to be that the older I get the quicker the time flies…

For my first post of the year I thought I would share my favourite foods …

I love food…Good food, but my tastes have changed over the years, is that with age or location and availability of foods? Maybe, but here are a few favorites of mine…. recipes I make often, or if the family asks for…

This is a recipe that my daughter gave me along with a packet of Chia seeds as I couldn’t
always get them here. That has now changed due their growing popularity and they are sold everywhere here now.

Banana Smoothie

Bananas we have in spades as they grow in abundance here so my freezer always has frozen bananas ready to make a smoothie.

Ingredients:

• 1 frozen Banana
• 1 cup of coconut milk.
• 2 tbsp oats.
• 1tbsp peanut butter or you can use halved walnuts as in the picture.
• A shot of espresso.
• 1 cup of ice
• 1tsp of cinnamon, nutmeg, chia seeds and honey.

Put all ingredients in your blender and blitz away. Pour into glass and enjoy!

This little dip is a recipe from Bali given to me by my grandson’s girlfriend it is very easy to make but made more special by the addition of tamarind.

Called Rujak sauce it is lovely with mangoes.

• Take 200 gm of palm sugar shaved.
• 15 gm of tamarind flesh and 5 tbsp of water leave to infuse for 5 mins and then drain and keep the tamarind flavoured water.
• 6 or more Thai chillies.
• 1/4 tsp shrimp paste and 1/4tsp salt.

Blitz all these ingredients together and you have fiery little dipping sauce.

Since living here I have met many people from around the world who are willing to share their recipes which is great for me as I have tasted so many wonderful dishes and some I had never even dreamed of…

Beef Rendang is one such dish made with Tamarind, which is a fruit I hadn’t cooked with until I lived here In Thailand …Tamarind is lovely with prawns but this recipe for Beef Rendang is a recipe given to me by my friend Mamik and is very nice… the beef is amazing.

It is also my go-to recipe if I want that special dish to impress, although there are many ingredients. and it has quite a long prep time. It is so worth it and as I said earlier if I am having guests a really lovely dish. You can see how rich and flavoursome that meat looks, and it tastes amazing…

It is also probably the only dish I will spend as much time as I do preparing and making it.

Ingredients:

• 2” Galangal
• 2” Ginger
• 1 kg beef (Bottom Round)
• 1-litre Coconut Milk (3 sm tins and made to one litre with water)
• Grind together and put on one side, 1 tbsp Coriander seeds, 1 tsp Cumin seeds and 1 tsp white peppercorns.
• 2 Star Anise.
• Half cup toasted coconut (pound in pestle until oil is released and it looks like a paste.)
• 1 Turmeric Leaf (Leave the leaf whole but tear side to stem along leaf) this releases the flavour.
• 2 stems lemongrass crushed along the stem.
• 2 Lime leaves.
• Soak 1-2 tsp Tamarind pulp in a little water and set aside for later.

Curry Paste: Blitz the next 4 ingredients together.

• 2cm Fresh Turmeric.
• 10 Shallots
• 5 Cloves Garlic
• 10 large red chillies (de-seed if you want a milder curry)

Let’s Cook!

  1. Cut the beef into large cubes.
  2. Put a tbsp oil of your choice in a cooking pot (I use a wok). Add Curry paste, ground coriander seeds, cumin and white peppercorns plus add chopped ginger, turmeric and galangal stir for 5 mins, add beef and stir to combine. Add coconut milk/water mixture and stir to combine.
  3. Slowly bring to a gentle simmer, add torn turmeric leaf, lemongrass and lime leaves and star anise.
  4. Cover pan and cook until meat is tender at least 3 hrs on a low simmer, stirring occasionally.
  5. Add the ground coconut paste about half hour before the end of the cooking time and also the tamarind liquid and this is when the magic happens and the taste goes from just another curry to something wonderful.
  6. When the meat is cooked and tender remove the turmeric leaf and lemongrass stalks although if we are not eating the curry until the next day I leave them and remove them before we eat the curry.

This curry should traditionally have a very thick paste and is also best eaten the next day to allow the flavours to develop.

However, as Europeans prefer a thinner sauce you can choose not to reduce down as much.

Pizza is something I rarely eat however I discovered this lovely cauliflower Pizza Base and love it…

Ingredients

• 1 medium head cauliflower.
• 1 egg, large.
• 1 tsp Italian seasoning (dried oregano or basil)
• 1/8 tsp salt.
• 1/4 tsp ground black pepper.
• 1/2 cup Parmesan or Mozzarella cheese, grated/shredded.
• Cooking spray, I make my own spray I don’t do bought oil in spray cans…I have a little stainless steel one for oil.

Let’s Cook!

  1. Preheat the oven to 375 degrees F/190 C and line a baking sheet with unbleached parchment paper.
  2. Rinse cauliflower, remove the outer leaves, separate into florets and chop into smaller pieces. Process in a food processor in 2 batches, until a rice like texture forms.
  3. Transfer cauliflower rice on a prepared baking sheet and bake for 10 mins this just removes some of the moisture.
  4. Remove cooked cauliflower rice from the oven, transfer to a bowl lined with a double/triple layered cheesecloth or linen towel, and let cool for 5 minutes.
  5. Then squeeze the liquid out of the ball as hard as you can. Be patient and do this a few times until barely any liquid comes out.
  6. Increase oven temperature to 4 degrees F/200 C. Then in a medium mixing bowl whisk the egg with dried herbs, salt and pepper for 10 seconds. Add cheese and squeezed cauliflower mix very well with a spatula until combined.
  7. Line the same baking sheet with new parchment paper and spray with cooking spray.
  8. Transfer cauliflower dough to the middle and flatten with your hands until thin pizza crust forms.
  9. Bake for 20 minutes, carefully flip with a spatula and bake for a few more minutes. Top with your favourite toppings and bake again until cheese on top turns golden brown.

Slice and enjoy! If you are like me and love a nice thin crispy base then this it and so tasty…I love it!

Pad Thai is the ultimate “street food” The best of these cooks have cooked the same dish day-after-day, year-after-year and have achieved near perfection.

A great Pad Thai is dry and light bodied, with a fresh, complex, balanced flavour. It should be reddish, brownish in colour.

Pad Thai is another dish which is perfect for vegetarians, just omit the shrimp and substitute soy sauce for a vegetarian substitute. Add tofu if you like and viola perfect for a vegetarian.

Ingredients:

• 1/2 pack Thai rice noodles
• 1-1/3 cup bean sprouts.
• 1-1/2 cup Chinese chives.
• 2 tablespoon cooking oil
• 2 tablespoons tamarind paste
• 2 tablespoon sugar ( I use palm Sugar)
• 1 minced or finely chopped shallots
• 1/2 lime
• 2 tablespoons peanuts ( Optional )
• 1/2-1/4 lb shrimp.
• ground pepper
• 1/2 teaspoon ground dried chilli pepper
• 3 cloves minced garlic
• 1tbsp Soy sauce
• 4 teaspoons fish sauce
• 1 egg

Tips:

The trickiest part is the soaked noodles. Noodles should be somewhat flexible and solid, not completely expanded and soft. When in doubt, under-soak. You can always add more water in the pan, but you can’t take it out.

In this recipe, pre-ground pepper, particularly pre-ground white pepper is better than fresh ground pepper.

For kids, omit the ground dried chilli pepper.

Tamarind adds some flavour and acidity, but you can substitute white vinegar.

Preparation

  1. Start with soaking the dry noodles in lukewarm or room temperature water while preparing the other ingredients. When you are ready to put ingredients in the pan, the noodles should be flexible but not mushy.
  2. Cut the Chinese chives into 1 inch long pieces. Set aside a few fresh chives for a garnish.
  3. Rinse the bean sprouts and save half for serving fresh. Mince or finely chop shallot and garlic together.

Let’s Cook

  1. Heat wok on high heat and pour oil in the wok. Fry the peanuts until toasted and remove them from the wok. The peanuts can be toasted in the pan without oil as well. Add shallot and garlic; stir them until they start to brown.
  2. Drain the noodles and add to the wok. Stir quickly to keep things from sticking. Add tamarind, sugar, fish sauce, soy sauce and chilli pepper. Stir. The heat should remain high. If your wok is not hot enough, you will see a lot of juice in the wok at this point. Turn up the heat, if it is the case.
  3. Make room for the egg by pushing all noodles to the side of the wok. Crack the egg onto the wok and scramble it until it is almost all cooked. Fold the egg into the noodles. The noodles should soft and chewy. Pull a strand out and taste. If the noodles are too hard (not cooked), add a little bit of water.
  4. When you get the right taste, add shrimp and stir. Sprinkle white pepper around. Add bean sprouts and chives. Stir a few more times. The noodles should be soft, dry and very tangled.
  5. Pour onto the serving plate and sprinkle with ground pepper and peanuts. (I serve peanuts) on the side as do many restaurants now.

Serve hot with a wedge of lime on the side, raw Chinese chives and raw bean sprouts on top.

Last week I gave you recipes for mixes and spices that I always make but thinking about it, I wasn’t really very fair, as I didn’t give you my recipes that I made with the mixes did I?

This week I will be using my spices /mixes and giving you the recipes that again are ones we know and love here at home… Of course if you have recipes which you make using the mixes I shared then please share with us…Sally and I would love to know what you cook…

Green Sauce… A wonderful dressing for fish or chicken… made with tahini

Ingredients:

• 3 tbsp white miso
• 3 tbsp fresh lemon juice
• 2 tbsp fresh lime juice
• 2 tbsp olive oil
• 4 tsp Tahini
• 1 tbsp apple cider vinegar
• 1 tbsp honey, preferably raw
• 2 cups cilantro leaves with tender stems
• ⅓ cup sliced chives
• 1½ tsp grated peeled ginger
• 1 tsp ground coriander
• Coarse salt, freshly ground pepper

I love these sauces because they are quick and easy to make once the ingredients are measured out. Liquids first, and a quick whizz until the miso is dissolved and the sauce smooth, then add the herbs another quick whizz and you are done …It will keep in the fridge for at least 3 days so you can make it in advance.

Next is the chicken or pork Masala curry we make using my Chettinad spice mix.

Ingredients:

• 500 gm Chicken thighs or legs cut into two or pork hip cubed
• 2 tbsp ghee or Oil.
• 1 large Onion., chopped
• 2 Large tomatoes pureed.
• 1-2 sprigs Curry Leaves.
• 1 Bay Leaf( Optional)

Marinade:

• 1/8th tsp Turmeric.
• 1-2 tsp Chilli Powder.
• 2 tbsp Natural Yoghurt.

For paste:

• 4 /6 garlic cloves
• 2/3 in piece fresh ginger chopped finely.
• Salt as required.

Let’s Cook

Marinade the chicken in the yoghurt, turmeric and chilli powder for about 20 minutes.
Blitz the ginger and garlic together I have a small blender for this purpose

Add ghee/oil to pan and add the ginger and garlic paste with some cumin seeds and cook for a few minutes add the onions and Masala powder and let this mixture sweat until the onions are golden this adds more flavour.

Then add the chicken, curry leaves and tomatoes stir well to combine.

Add little water, bring to slow boil and reduce heat to simmer until chicken cooked.

N.B. If this is the first time you have used the masala mix then start with 1 spoonful you can always add more.

If I am making more, then I increase either the tomatoes or the yoghurt as we prefer ours with more tomatoes. If you prefer a creamier one, increase the yoghurt…personal choice and practice makes perfect. Ours are definitely much better than when we first started making them I believe that with Indian the same as Thai food the ingredients are just a guide.

Lemon grass Chicken Skewers.

Ingredients:

• 1 kg minced chicken
• 4 – 5 garlic cloves , grated ( adjust to taste )
• 4 tsp white pepper powder
• 2 1/2 tsp salt ( to taste )
• 1/2 egg yolks
• 5 tbsp pounded lemongrass , white part only
• 10 pieces of coriander roots , pounded
• 2 tbsp coriander leaves , finely chopped
• 1 carrot , regular size , grated
• 10 stalks of lemongrass (maybe more), cut the green bit into 10 cm long pieces to make skewers.

Let’s Cook!

Mix all the ingredients above together, you may not need all the egg yolk ( I would separate 1 ) to start with and just add it bit by bit If the mixture is too sticky you may add a little bit of bread crumb.

Take one dessert spoon of the mixture and shape it on the lemongrass stalk.

Arrange the chicken skewers on a baking tray lined with aluminium foil

Bake it in preheated oven at 180 degree C, for 20 – 30 minutes. The baking time may vary.

My oven tends to be very hot and it takes only 20 minutes , then I switched the oven off , left the chicken there for while to get the slight brown colour .

Serve with the Thai Peanut sauce or the Rujak sauce if you want something a little spicer.

We love these and the lemon grass imparts a lovely flavour but a dish I make more so when I have guests.

For quickness I just cut a couple of chicken breasts in slices and put a few pieces on a wooden skewer brush with the peanut sauce and cook either on the BBQ or on the griddle turning often so as not to burn them.

Then serve them with additional peanut sauce and a salad maybe some cucumber relish.

Now for some versatile Fajitas

Fajitas were very popular when had our bar/restaurant in Phuket…Quick to make and served sizzling on a cast iron skillet they went down a treat…

Fajitas are a versatile meal and you can you thin slices of beef/ pork instead of chicken and add some baby corns sliced if you have them…

Ingredients:

• 1 pound boneless skinless chicken breast, cut into thin strips
• 1/2 medium sweet red pepper, julienned
• 1/2 medium green pepper, julienned
• ½ medium yellow pepper ( optional)
• 4 spring onions, thinly sliced
• 1/2 cup chopped onion
• 6 flour tortillas (8 inches), warmed
• Shredded cheddar cheese, taco sauce, salsa, guacamole and sour cream
• Lime Juice
• Oil to cook

Let’s Cook!

In a large zip loc bag, combine 1 tbsp oil, lime juice and 1-2 tbsp of fajita spice add the chicken. Seal and turn to coat; refrigerate for 1-3 hours.

In a large skillet, saute peppers and onions in a little oil until crisp-tender. Remove and keep warm.

In the same skillet, cook chicken not the marinade over medium-high heat for 5-6 minutes or until no longer pink. Return pepper mixture to pan; heat through.

Spoon filling down the centre of tortillas; fold in half. Serve with cheese, taco sauce, salsa, guacamole and sour cream or take to the table and let everyone make their own.

N.B. As with any spice mix the first time you use it start small you can always add more when cooking your chicken.

Last week I explored rice which is one of the staples in Thai cooking this week it is noodles which are also very much in the forefront of Thai Cuisine… Again noodles are sold everywhere both dried and fresh…

There are many types and thicknesses of noodles here made from wheat flour, mung bean, rice and or egg.

Egg noodles made with buck wheat and egg which gives them that yellow colour are generally used in soups or stir fries with chicken and herbs.

Quick to make it is a favourite in this house of hubby as he prefers food less spicy than me and the kids like it as it is mild flavoured but tasty and filling.

Glass Noodles as the name suggests look just like glass …made from mung beans they require no cooking just a quick soak in hot water to soften them before adding them to stir fries or soup. Dropped into hot fat they puff up and are used as decoration.

Rice Noodles come in 4 sizes vermicelli, thin, medium and wide. Gluten free they are a delicate noodle which again just require a quick soak in hot not boiling water before adding to soup, salads or stir fry.

1. Rice Vermicelli (Sen Mee) is made from mung been starch and generally sold in packs in small looped bundles. Often served cold topped with grilled meat or fish and a dip or used to make rice paper rolls with shrimp, lettuce and herbs these are one of my favourites. Rather than me trying to explain I have found an easy to follow u tube video. Just prepare your ingredients normally cucumber, spring onions, mint, Thai basil, carrot, some precooked chicken or prawns and some pre soaked vermicelli noodles. Julienne your cucumber, spring onion and carrots and pop everything in little bowls all ready to roll. A bowl of hot water and a packet of the rice spring roll wrappers.

2. Thin Rice Noodles (Sen Yai) are used in soups and stir fries.

3. Medium Rice Noodles are similar in size to linguine and used to make that famous Thai dish of Pad Thai.

4. Wide Rice Noodles which are a similar size to Pappardelle are used again in soups, stir fries and to make the famous Pad Kee Mao (Drunken Noodles)

This is a dish influenced by the Chinese people who live in Thailand and Laos…Kee Mao means drunkard and these spicy noodles which are perfect with an ice cold beer are said to also be a cure for a hangover… A hair of the dog scenario …methinks…

When you buy a bowl of the popular noodle soup you will see a selection of the above noodles and will select your favourite, mine are the thin rice noodles with which I will have the tasty broth, chicken, spring onions and the chilli accompaniments …Not for me the processed fish balls, tofu and the congealed pigs blood which most Thais will have. I have been told that it takes the noodle soup to another level and is very tasty…Just not for this lady…

Now Pad Thai (Phat Thai) is another popular Thai dish and one that I do like.

Khao Soi is another dish made with noodles in the yellow curry and topped with crispy fried noodles that is probably my favourite noodle dish…Hot and spicy and full of flavour it is one of my all-time favourite Thai dishes.

Khao Soi originated from here in the North and holds almost iconic status…said to originate from the Chiang Mai area the name means ” cut rice” in Thai although it is thought the word originates from the Burmese word for noodles and is a corruption of the word Khao swe.

To make absolutely from scratch including the curry paste is very time consuming and the amount of ingredients puts many people of making it.

There are some very good Thai pastes available from Asian supermarkets around the world Mae Ploy is a very good one and I used to use that when I lived in the UK…

Ingredients:

• 4 chicken thighs
• 500 g coconut cream
• 200 g chicken stock
• 2 tbsp fish sauce
• 1 tbsp coconut sugar
• 250 g egg noodles
• Coconut oil
• 1- 2 tbsp yellow or red curry paste ( I would start one and add once you have tasted it)

Let’s Cook!

In a large sauce pan or wok, stir-fry the curry paste in a little oil until the fragrance has released add the chicken thighs stirring gently.

Add the coconut cream little by little and then add the stock. Bring to a slow, rolling boil and lower the heat then add fish sauce and coconut sugar.

Mix well and cook for about 15/20 minutes on low heat.

While the chicken is cooking prepare the noodles…

Cook the egg noodles as per the packet instructions until the egg noodles until cooked (if using fresh noodles, cook only half of them).

Set aside half of the noodles. To deep-fry the other half: warm-up the oil and, in your hands, form “nests” with the noodles. Deep-fry the nests on both sides (about 1 minute each side). Drain on kitchen paper and set aside.

To Serve:

In individual bowls, place first boiled noodles and then pour the hot curry sauce on it. Add in each bowl, 1 chicken thigh, 1 nest of deep-fried noodles and 1 teaspoon of each of the side dishes. Serve immediately. (See image)

Serve with side dishes:

  • Pickled mustard leaves, sliced or Pak Dong (Thai pickled cabbage)
  • Spring onions and coriander, chopped
  • Shallots, sliced
  • Lime wedges

Deep-fried chilli paste…This is fiery and not for the faint hearted.

This type of chilli paste should be accurately called nam prig pud but most people know it as nam prig pow. The term pow is referred to roasting method in an open flame until the outside is charred. Pud (or pad) is stir fry method i.e. Pad Thai – stir fried. This chilli paste is made with ground spices, and then stir fried with oil. The true ‘nam prig pow’ has roasted ingredients and is not stir fried with oil. However, the term ‘nam prig pow’ now includes ‘nam prig pud’, and often ‘nam prig pud’ refers exclusively to ‘nam prig pow,’ as evident in store-bought chilli paste.

It is quite a time consuming task so I would advise buying a commercial one if you want a hot paste although sometimes they are too sweet so you may want to add some lime juice to offset the sweetness.

Pak Dong Thai Pickled Cabbage:

• 1 white cabbage. cut or torn into pieces.
• 8 large spring onions chopped
• Coarse Salt.

Pickled cabbage is very easy to do and there are many variations I have seen it with fresh chillies. It can also be made with Chinese cabbage or Pak Choy…Our preference is just plain old white cabbage and spring onions it is quick, easy and very moreish it can be eaten on its own, stirred into soup or with a curry as an accompaniment. It doesn’t last long here at all as our little granddaughter loves it and just eats it on its own.

Let’s Pickle:

Layer Cabbage, Onions and salt in the dish add a little water. Mix it all together with your hands.

We then leave the dish covered on kitchen top or in the sun for 1 day.

Then drain and lightly rinse and add more salt if required. Cover and leave for 2/3 days or until it reaches your ideal taste. With pickled cabbage, it is purely down to personal taste some like it saltier than others. Just play with it and you will soon discover your ideal version.

Then refrigerate and enjoy!

Pad Kee Mao (Drunken Noodles) are spicy and hot…

Ingredients:

• 4 tbsp fish sauce
• 3 tbsp sweet soy sauce
• 2 tsp rice vinegar
• 6 cloves garlic
• 5 Thai chillies
• 3 tbsp coconut oil
• ½ large onion thinly sliced
• 1 pound ground pork
• 1 red bell pepper sliced
• 12 ounces wide rice noodles
• 2 large handfuls Thai basil (or sweet basil) roughly torn
• 1/2 lime juiced
• Lime wedges for serving

Let’s Cook!

Soak the rice noodles in warm tap water for about 30 minutes.

Stir together the fish sauce, soy sauce and vinegar, and set aside.

Roughly chop the garlic and 3 of the chillies together. Chop the other two chillies, and set aside.

Preheat a wok or large skillet over medium-high heat; when hot, add the oil, the garlic/chilli mixture and the onion. Cook, stirring constantly, until the garlic releases its fragrance, about 30 seconds. Add the pork and a splash of the sauce.

Cook, breaking up the meat with a wooden spoon until the pork is cooked through, about 5 minutes.

Drain the noodles and add them with the bell peppers to the pan. Increase the heat to high, and add the sauce. Cook, tossing everything together and separating the noodles, until all ingredients are coated with the sauce and it thickens slightly.

Toss in the basil, lime juice and the additional two chillies. Serve immediately with a side of lime wedges and a cold beer.
